The Raisins are nothing but the dehydrated form of Grapes. After Honey, dry grapes were used as a sweetener until the medieval period. During earlier times, raisins were considered to be more valuable and used as a barter currency and reward.

All grapes are not suitable for making raisins. The very sweet Grapes are selected and used for drying. There are two common types of raisins available, Dark and Golden. Dark raisins are naturally darkened as they dry and golden raisins are made by the use of sulfur dioxide (sulfites).

The Golden raisins have a combination of sweet and tangy taste. Darker Raisins taste sweeter and less tangy. Raisins flavour best when they are moist and undamaged.
