What are sprouts?
Sprouts are quite remarkable in terms of nutritional content. Once the seed (or pulse or grain) has germinated, the nutritional value rises dramatically. There are almost 30 per cent b vitamins and 60 per cent more vitamin c in the sprout than in the original seed, pulse or grain.

Sprouted Mung Bean denotes Whole Green Mung Bean, which has been sprouted.
HOW TO EASILY MAKE GREEN MUNG BEAN SPROUTS AT HOME?
Mulaikattiya Pachai Payaru Seivathu Eppadi -
There are various methods to make sprouts like using muslin cloth, colander or perforated vessel, casserole hot box and sprout maker. I have tried almost all the methods to make sprouts. In that, I find the casserole hot box method is beginner-friendly and also the easiest and quickest to make healthy sprouts at home. The below steps will help you to make healthy green mung beans sprouts -
STEP 1- Take a fresh and clean green mung bean in a bowl. (note – a year older or more than a year older green mung bean will not sprout).
STEP 2- Wash the green mung bean in 3-4 exchanges of water.
STEP 3- Drain the water completely and soak them in drinking water for 6 hours or overnight.
STEP 4- Next day or After 6 hours, drain the water completely. (put them in a colander and let them sit for 5-10 minutes).
STEP 5- Take a completely dried casserole hot box, put the green mung bean and spread evenly. Close the lid and keep it in a warm and dark place. (you can keep it on any corner side of the kitchen countertop).
STEP 6- Do not disturb for at least 10 hours.
STEP 7- Within 10-12 hours sprouted mung bean is ready to use.
STEP 8- You can use it immediately or store it for later use. (Always wash sprouted mung bean before using).
You can also follow the same method to sprout WHITE CHICKPEA or BLACK CHICKPEA but it takes a longer time to sprout. Generally, larger grains take a longer time to sprout.

Tip 1 – Split Green Mung Bean will not germinate.
Tip 2 - Very old Green Mung beans will not properly germinate.
FLAVOUR OF SPROUTED GREEN MUNG BEAN/MULAIKATTIYA PACHAI PAYARU
A freshly Sprouted Green Mung Bean tastes sweet and also gives a nutty texture. After 2-3 days, sprouted mung bean will start to lose sweet flavour and nutty texture and also taste bitter.

Mung bean is the most commonly available beansprouts. It is also a popular sprout in Chinese, Indian and Asian cooking.
Sprouted green mung bean can be used to make both sweet and savoury dishes. Instead of whole green mung bean, sprouted green mung bean can be used to enhance the taste and nutritional value of the dishes.
It can be used to make a healthy salad, curry, gravy, stir-fry, and stuffing for paratha and breakfast dishes. It complements the flavour of other ingredients.

When buying sprouts, look for fresh and short shoots. Longer shoots most of the time taste bitter.
Always buy the recently dated and use it within 1-2 days.
Never buy the brown-edged sprouts.
HOW TO STORE MUNG BEAN SPROUTS/MULAIKATTIYA PACHAI PAYARU?
Always store readymade sprouts in the same packaging in the refrigerator. Homemade sprouts can be stored in a well-dried container in the refrigerator and used within 1-2 days.
