Tapioca Pearls-Javvarisi-Sabudana

Sabudana/Javvarisi is actually a form of tapioca root/maravalli kizhangu (Tamil)/kappa kilangu (Malayalam), also known as cassava root. Sabudana/Javvarisi is extracted from the milk of tapioca root.

HOW ARE SABUDANA/TAPIOCA PEARLS MADE IN INDIA?

The well-matured tapioca root/maravalli kizhangu is collected directly from the farmers, washed, peeled, and crushed to extract its milk. Then the milk is filled into huge tanks to rest for eight hours. So that the residual impurities float at the top of the tank and the milk is settled at the bottom. The residual impurities are drained out and settled milk cakes are collected and converted into small globules using a special machine. These small globules are then sorted into different sizes by passing through different sieves, the tiny balls are roasted on hot plates or heated in steam. Finally, sabudana are dried under sunlight to remove the remaining moisture from them.

And, that’s how sabudana is made in factories of Salem district, Tamilnadu, India.

APPEARANCE OF SABUDANA/TAPIOCA PEARLS

There are two varieties of Sabudana available:

  • Regular sabudana or common sabudana, which is roasted and dried.
Tapioca Pearls-Javvarisi-Sabudana

  • Nylon sabudana or steamed sabudana, which is steamed and dried.

Regular sabudana has a natural white colour and nylon sabudana has a more transparent white colour. Both of them are available in different sizes-small, medium and large.
