Tutti frutti is also known as candied fruits. It is a colourful confectionery containing various chopped and usually candied fruits. The term “TUTTI FRUTTI” derives from the phrase meaning “ALL FRUITS”. In Indian terms, tutti frutti usually refers to CANDIED RAW PAPAYA.

For making an Indian version of homemade tutti frutti, raw papaya is washed, peeled and chopped into the desired shape (generally it is chopped into small-sized cubical pieces). Then it is blanched in water and then boiled in sugar syrup. Once papaya is cooked, artificial or natural colour is added and soaked for 24 hours. Finally, excess sugar syrup is drained out and dried for 2-3 days. Once completely dried, it is ready to use or refrigerate for later use.
