ABOUT - "BLACK RICE"

Black Rice, also known as purple rice, forbidden rice, or emperor’s rice. It is a rice type belonging to the Oryza sativa L. species.

In Rice (Oryza sativa), most varieties have white grains, but some have brown, red, or black grains. The colour of the grain is determined by the deposition of certain pigments. In black rice, the colour is caused by the deposition of anthocyanin pigment (a powerful antioxidant).

BLACK RICE IN INDIA

In India, we have numerous Black rice growing in different parts of the country. It is most extensively grown in the North-Eastern state of Manipur. Manipur is particularly famous for CHAK-HAO AMUBI (BLACK RICE) and has recently been granted the geographical indication (GI) tag under the agricultural products of the geographical indications of goods (Registration and Protection) act of 1999.

Apart from Manipur, the few other North Indian states including Jharkhand, Chhattisgarh, West Bengal, Odia and the South Indian states including Karnataka, Andhra Pradesh, Telangana and Tamilnadu are also growing Black rice.

In this article, I’ve shared about one of the popular Black rice varieties from Tamilnadu called “KARUPPU KAVUNI ARISI” including its flavour, culinary uses, and purchase and storage ideas.

WHAT IS KARUPPU KAVUNI ARISI/BLACK RICE?

Karuppu Kavuni Arisi/Kavuni Arisi is a type of Black rice grown extensively in Tamilnadu. This particular black rice is brought back from Burma a long time ago by Tamil Nadu’s trading community "THE NATTUKOTTAI CHETTIAR". From that time onwards karuppu kavuni arisi (Black rice) is being cultivated in and around the KARAIKUDI (CHETTINAD) region. Karuppu kavuni arisi is now widely being cultivated throughout Tamilnadu and available by the name “NATTU KARUPPU KAVUNI ARISI”.

APPEARANCE OF KARUPPU KAVUNI ARISI/BLACK RICE

Karuppu kavuni arisi is black variety rice and medium-size grain type. It is a thicker grain with ridges and deep black-reddish-brown coloured outer layer and white coloured inner layer rice grains.

Marathi name – Kala Bhat.

As I mentioned earlier in this article, Karuppu kavuni arisi (Black rice) was brought back from Burma by Tamil Nadu's trading community “The Nattukottai Chettiar”. Karuppu kavuni arisi, as an ingredient has become a part of CHETTINAD CUISINE. No wedding or festival is celebrated without the use of Karuppu kavuni arisi in the CHETTIAR COMMUNITY. It is a special ingredient in Chettinad cuisine.

It is a staple ingredient in Chettiar households. It is also a popularly used ingredient throughout Tamilnadu because of its various health benefits and unique taste.

Karuppu kavuni arisi is a versatile ingredient. It can be used to make both sweet and savoury dishes. However, in Chettinad cuisine karuppu kavuni arisi, is preferably used to make various sweet dishes.
