What is kollu/horse gram?

Horse gram is also known as madras gram in English, kollu paruppu or kaanam paruppu in the Tamil language, and kulthi ka dal in Hindi. It is a type of legume popularly known for promoting weight loss and is also known to treat a wide range of ailments. There is a famous saying in the Tamil language that goes like this -

"இளைத்தவனுக்கு எள்ளு, கொழுத்தவனுக்கு கொள்ளு"

Meaning- Feed the lean man with sesame seeds and feed the fatty man with horse grams.

In this article, I've shared a detailed recipe for kollu sundal/horse gram sundal along with important notes. Kollu is one of the healthiest and easiest recipes with very few ingredients. All you need is kollu, dry red chilli, grated coconut, mustard seeds, curry leaves, asafoetida, salt, oil and water.

What is Sundal?

Sundal is a popular and traditional South Indian recipe. It is a dry dish made with any type of legume. However, white chana dal and black chana dal are popular ingredients used to make sundal recipes. It is a healthy dish packed with proteins and seasoned with healing spices like mustard seeds, asafoetida, dried red chilli and curry leaves.

Sundals are served as a tea-time snack or evening snack. Actually, it is popular and favourite street food in Tamilnadu. From streets to temples to beaches, the sundal is ubiquitous in South India, especially Tamilnadu. Sundals are delicious favourites served as a prasadam during the Navarathri festival in India.

HOW TO MAKE KOLLU SUNDAL RECIPE?/HOW TO MAKE HORSE GRAM SUNDAL?

Cuisine - South Indian
Serving - 6
Timing - 8 hours + 30 minutes

INGREDIENTS

Kollu/Horse gram - 1 cup
Grated coconut - 1/2 cup
Water - 6 cups
Salt - To taste

TEMPERING

Oil - 1 tblspn
Mustard seeds - 1 spn
Dry red chilli - 5
Asafoetida - 1/4 spn
Curry leaves - 1 sprig

INSTRUCTIONS

1. To begin making the Kollu Sundal Recipe - Firstly, kollu/horse gram is a hard seed, soaking them is a necessary step to be done before cooking.

2. To Soak - Take the kollu in a bowl and wash them in 2-3 exchanges of water.

3. Drain the excess water completely and add 3 cups of fresh water and allow to soak for 8 hours or overnight.

4. To Pressure cook - Next day or after 8 hours, drain the water and add soaked kollu in a pressure cooker.

5. Now add the remaining 3 cups of water and the required amount of salt mix well and pressure cook for 5-6 whistles on a medium flame.

6. Once 5-6 whistles appear switch off the flame and allow pressure to subside (it takes 10-15 minutes).

7. Now remove the whistle and open the lid and check for the doneness of the kollu (kollu should be completely soft and well-cooked).

8. Drain the excess water completely from the cooked kollu.

9. To Temper - Heat a tempering pan/tadka pan, add oil allow to heat, once mild smoke appears add mustard seeds.

10. Once mustard seeds crackled add dry red chilli and fry for a few seconds.

11. Switch off the flame and add curry leaves, and asafoetida mix well and add to cooked kollu mix well.

12. Finally, add grated coconut to the horse gram and mix well.

13. Kollu sundal is ready.

You can serve this Kollu Sundal Recipe as an accompaniment to lunch meals or as a healthy snack or as a lunchbox snack.

IMPORTANT NOTES

1. Kollu/Horse gram might contain small, small stones, manually checking and removing the stones is an important step. So, do this step before using them in cooking (this step needs to be done before washing and soaking kollu).

2. In case, if you forgot to soak the kollu overnight or do not have time to soak it for 8 hours. You can soak them in hot water for 3-4 hours and pressure cook them for 7-8 whistles. Do check the doneness of the kollu and if needed cooking time please increase by 2-3 whistles.

3. You can adjust the salt level and spice level according to your preference.

4. You can replace kollu/horse gram with any other type of legume like chana dal, dried peas and many more.
