Finally, garnished with freshly chopped coriander leaves.

Chettinad Cauliflower Soup Ingredients
Cauliflower florets - 1 cup
Onion (chopped) - 1/2
Tomato (chopped) - 1/2
Green chilli - 2
Moong Dal - 1/4 cup
Salt - to taste
Water - 3 cups
FOR TEMPERING
Oil - 1 tablespoon
Kalpasi - 1 leaf
Fennel seeds - 1/4 teaspoon
Cinnamon - 1/4 inch piece
Curry leaves- 1 sprig
FOR GARNISH
Coriander leaves - 1 tablespoon
INSTRUCTIONS
To make the Chettinad cauliflower soup recipe:
1. Start by cleaning and washing the cauliflower florets.
2. Slice the onion and chop the tomato, coriander leaves, and green chilli. Keep all the ingredients ready to cook.
3. Heat a pan and add rinsed moong dal with 3 cups of water and 1/2 teaspoon turmeric and cook for 6-8 minutes. Set aside.
4. Heat a pressure cooker over moderate flame and add oil.
5. Once the oil is hot, add kalpasi, fennel seeds, cinnamon, and curry leaves. Fry for a few seconds.
6. Now, add onion and curry leaves. Fry for a few seconds.
7. Add the tomato, green chilli, and cauliflower florets. Saute for 2-3 minutes.
8. Add dal stock and salt. Close the lid.
9. Allow to pressure cook for 2 whistles.
10. Switch off the flame.
11. Finally, garnish with freshly chopped coriander leaves.
12. Your Chettinad cauliflower soup recipe is ready.
