Kollu chutney, also known as horse gram chutney, is a spicy and flavorful recipe made with horse gram as the primary ingredient. It's seasoned with dry red chilli, tamarind, asafoetida, salt, and oil. The recipe also includes grated coconut as a binding ingredient.

INGREDIENT
Kollu/Horse gram/Ulava - 1/4 cup
Dry red chilli - 5
Tamarind - 1/2 lemon size
Coconut (grated) - 1/4 cup
Asafoetida - 1/2 teaspoon
Salt - to taste
Oil - 2 tablespoons
Water - 1/2 cup
INSTRUCTIONS
To make kollu chutney (horse gram chutney) :
1. Start by washing the kollu or horse gram in 2-3 exchanges of water. Put them in a small strainer to drain the water.
2. Next, heat 1 tablespoon of oil in a kadai over a moderate flame and add the kollu or horse gram. Fry for 3-4 minutes until it changes colour and starts to pop. Wait for a few seconds, and then turn off the flame.
3. Transfer the kollu or horse gram to a wide plate.
4. In the same pan, heat the remaining oil and add dry red chillies. Fry for a few seconds and then add grated coconut and tamarind. Fry for a few more seconds, then switch off the flame and transfer the mixture to the plate.
5. Allow all the ingredients to cool completely.
6. To grind, add all the ingredients (including salt and asafoetida) to a mixer grinder and grind into a coarse or smooth paste, gradually adding 1/2 to 3/4 cup of water.
7. Transfer the chutney to a serving bowl.
8. Your kollu chutney/horse gram chutney is ready.
You can serve this chutney with rice, idli, dosa, paniyaram, and adai.

Important tips to make a tasty Kollu chutney recipe/Horse gram chutney recipe
1. Be careful while frying the washed kollu/horse gram, because the oil splutters.
2. Always use the deep Kadai while frying kollu/horse grams.
3. You can increase or decrease the level of spice.
4. Do not burn the kollu/horse gram while frying.
5. You can store this kollu chutney/horse gram chutney in the refrigerator for one or two days. But I do not recommend it to store and use.
6. Tempering this chutney is optional. You can temper the chutney with oil, mustard seeds and curry leaves.
