Kollu rasam recipe/Horse Gram Rasam Recipe is a healthy and nutritious recipe made with a boiled kollu paruppu/horse gram broth and flavoured with various Indian spices. Meaning - "One stone two mangoes"

Here "Kollu paruppu" is the stone and 2 mangoes are the recipes made from the kollu paruppu in single cooking.

To better understand the proverb - Kollu paruppu is soaked overnight and by the next day, it is boiled with fresh water. Once boiled, Kollu is removed from the broth and made into "kollu sundal" and the broth is made into rasam. And this rasam is called "Kollu rasam". To put it short, kollu paruppu is cooked once and used in two recipes. By this definition, I hope you understand what I mean about "kollu paruppu" and the "proverb".

In most South Indian homes, if we use kollu paruppu for the rasam recipe or sundal recipe, we usually do both recipes in a combo. We eat rice, kollu rasam, kollu sundal and appalam for lunch.

Kollu/Horse Gram is a type of legume popularly known for promoting weight loss and is also known to treat a wide range of illnesses. It is variously known as horse gram or madras gram in English, kulthi ka dal in Hindi and kollu paruppu or kaanam paruppu in Tamil.

How to make Kollu Rasam Recipe?/How to make Horse gram Rasam Recipe?

Kollu rasam recipe is a unique rasam recipe made with kollu paruppu, toor dal, asafoetida, tamarind, salt and flavoured and tempered with various Indian spices. It is a highly nutritious rasam recipe. Rasam recipes are mainly made as a side dish for rice. You can serve this rasam recipe with rice or serve it as a hot soup.

INGREDIENTS

Kollu paruppu/Horse gram - 2 tablespoons
Toor dal/Pigeon peas - 2 tablespoons
Tamarind extract - 1 cup
Asafoetida - 1/2 spoon
Salt - to taste

FOR RASAM POWDER

Garlic - 6 clove
Cumin - 1 teaspoon
Peppercorns - 2 teaspoons

TEMPERING

Oil - 2 teaspoons
Mustard seeds - 1/2 teaspoon
Cumin - 1 teaspoon
Dry red chilli (halved) - 1
Curry leaves - 1 sprig

INSTRUCTIONS

1. To begin making the kollu rasam recipe - Wash kollu paruppu (horse gram) and soak it in a cup of water for 8-9 hours or overnight.

2. Drain and rinse the kollu paruppu in 2-3 exchanges of water.

3. Wash toor dal in 2-3 exchanges of water.

4. In a pressure cooker, add both dals with 2 cups of water and cook under pressure for 4-5 whistles.

5. For rasam powder - In a mortar and pestle, add garlic, peppercorns and cumin and crush coarsely or use a mixer grinder to crush them coarsely.

6. In a pan, add tamarind extract, salt, asafoetida and freshly crushed spices mix well and place on the stove over moderate heat and cook for 2-3 minutes. Once it starts to boil, lower the heat and cook for 6-8 minutes.

7. Now, add boiled dal along with the broth. Keep the flame low and cook for another 5-6 minutes.

8. Meanwhile, heat oil in a tadka pan over moderate heat, add mustard seeds allow to splutter and add cumin and dry red chilli fry for 1 minute. Switch off the flame and add curry leaves wait for a few seconds.

9. Pour tempering to rasam and gently mix.

10. Kollu Rasam/Horse Gram Rasam recipe is ready.

IMPORTANT NOTES

1. Instead of making fresh rasam powder, you can use any rasam powder in this rasam recipe.

2. Rasam should be watery in consistency. So, adjust the water level according to the thickness of the rasam.

3. While tempering, use ghee instead of oil for a better taste.

4. If you plan to make kollu sundal and kollu rasam. Reserve the broth and 2 tablespoons of boiled kollu and make this recipe.

5. To make tamarind extract - soak 1 lemon-size tamarind in a cup of water for 15 minutes. Squeeze and extract the water and discard the pulp.
