What is Nimki/Bangla Nimki?

Nimki/Bangla Nimki is a traditional and popular savoury snack recipe made with maida flour (all-purpose flour) as the main ingredient and flavoured with various Indian spices like ajwain, cumin, peppercorns, black cumin and red chilli flakes.

Bangla nimki recipe is a classical recipe made with maida flour (all-purpose flour) as the main ingredient and flavoured with any of the spices mentioned above. You can use one or more spices to make the nimki recipes/Bangla nimki recipes.

In this recipe, I used maida flour (all-purpose flour) as the main ingredient and black cumin as a flavouring ingredient to make my version of Bangla nimki recipes. Generally, Bengalis who trace their origins back to East Bengal make more use of black cumin (called Kalo Jira in Bengali) than anyone in the country. They use black cumin generously in their cooking.

Black cumin, also known as nigella sativa or nigella seeds. It is also variously known as kalonji in Hindi, karunjeeragam in Tamil and Kalo Jira in Bengali. It is an edible spice used widely in cooking as well as medicine. In fact, in Arabic, black cumin/nigella seeds were known as "Habbat-el-Baraka" or the seed of blessings.

Black cumin is one of the healthiest spices and most healing spices. The Prophet Muhammad (PBUH) said that black cumin is a remedy for all diseases except death. As a South Indian, I use black cumin very rarely in my cooking. So, I was searching on the internet for black cumin-based Indian recipes particularly, snack recipes to include black cumin in my food. And I found this interesting Bangla nimki recipe in which black cumin is used generously and also it adds the main flavour to the Bangla nimki recipe. I have tried many of the nimki recipes and finally, I came up with my version of the Bangla nimki recipe. So here, on my blog, I share my version of the Bangla nimki recipe. It is a quick, simple recipe and a perfect accompaniment for your ginger and cardamom-flavoured tea or you can simply eat it as a snack.

How to make Bangla Nimki Recipe?/How to make Nimki Recipe?

Bangla Nimki Recipe/Nimki Recipe is a crispy, flaky and triangular-shaped savoury snack. You can serve this as a tea-time snack or just as a munching snack. Black cumin adds a biting texture to this Bangla nimki recipe.

INGREDIENTS

Maida flour (All-purpose flour) - 1 cup
Black cumin (Kalo Jira) - 1 teaspoon
Salt - to taste
Oil or Ghee - 1/4 cup
Water - 1/2 cup
Oil - for deep frying

FOR PASTE

Maida flour - 1 tablespoon
Oil or ghee - 1 tablespoon

INSTRUCTIONS

1. To begin making the Bangla nimki recipe/nimki recipe - In a deep bowl, add maida flour, black cumin, and salt. Combine all.

2. Further, add ghee or oil 1 tablespoon at a time and rub the flour and oil with your finger until it resembles bread crumbs.

3. Now add little water at a time and form a firm dough (Don't make it watery and soft dough).

4. Cover the dough and keep it aside for 30 minutes.

5. After 30 minutes, take a small bowl add the ingredients (maida and oil) mentioned in a paste section and mix well to form a thick paste.

6. Now take the dough and gently knead once and divide the dough into two equal balls.

7. Take a rolling board and place one dough ball and spread it like a chapati using the rolling pin and spread a layer of maida paste evenly.

8. Tightly roll the dough from your side to the other side.

9. Now using the knife, cut the roll equally. You will get 8-10 portions.

10. Take a portion of nimki and place it on the rolling board, where the swirled part faces upward and press lightly to form a coin shape nimki recipe (now you can deep fry this for a coin-shaped nimki recipe).

11. Now using a rolling pin spread the nimki into a circle and prick using a fork.
(Pricking them helps them not to puff up while frying).

12. Now fold the circle into a semi-circle and then again fold it into a triangular shape and gently press the corners to seal. 

13. Again prick them using a fork on both sides.

14. Repeat the above process and shape all the Bangla nimkis.

15. Heat oil in a deep kadhai over a low-medium flame, and deep-fry a few Bangla nimkis at a time. Fry for 2-3 minutes and flip both sides while frying for even cooking.

16. Once fried to a golden brown, remove from the oil and place on the absorbent paper to drain excess oil.

17. Cool the Bangla nimki recipe/nimki recipe completely.

18. Bangla nimki recipe/Nimki recipe/Crispy Bangla nimki recipe is ready.

IMPORTANT TIPS

1. You can replace or add any spices like peppercorns, ajwain, red chilli flakes and cumin according to your taste. If you add 2-3 spices at a time, use the spices equally (each 1/4 spoon).

2. For the crispy and flaky Bangla nimki recipes adding oil or ghee is very important while making Bangla nimki recipe dough.

3. Don't forget to keep the flame over moderate heat throughout the deep-frying.

4. Before storing the Bangla nimki recipes/nimki recipes/crispy nimki recipes, completely cool them.

5. You can store the Bangla nimki recipe/nimki recipe for a week or more. Don't forget to store the Bangla nimki recipe in an air-tight container.
