The pasi paruppu sambar recipe is made up of Pasi paruppu/Yellow moong dal as the main ingredient and flavoured with salt, tamarind and various spices. Pasi paruppu sambar recipe also includes fresh vegetables like brinjal, potato, green chilli, garlic, onion, tomato and fresh green leaves like curry leaves and coriander leaves.

Pasi paruppu sambar recipe/tiffin sambar recipe is an easy, light and one-pot sambar recipe. You can quickly make this sambar recipe within 30 minutes and serve it as a side dish for idli, dosai, kuzhi paniyaram, upma and medhu vadai.

INGREDIENTS

Pasi Paruppu/Yellow Moong Dal - 1/2 cup
Tamarind paste - 1 tablespoon
Sambar masala powder - 3 tablespoons
Turmeric - 1/4 teaspoon
Asafoetida - 1/4 teaspoon
Salt - to taste
Water - 3-4 cups

VEGETABLES

Brinjal - 4
Onion - 2
Tomato - 2
Potato - 1
Green Chilli - 1
Garlic (crushed) - 5

FOR TEMPERING

Oil - 2 tablespoons
Mustard seeds - 1/2 teaspoon
Dry red chilli (halved) - 1

FOR GARNISH

Curry leaves - 1 sprig
Coriander leaves (chopped) - 1 tablespoon

INSTRUCTIONS

1. To begin making the pasi paruppu sambar recipe/tiffin sambar recipe - Firstly, Wash the yellow moong dal and all the vegetables. Rough chop the brinjal, onion, tomato, potato and green chilli. Crush the garlic and finely chop the coriander leaves.

2. To cook - In a pressure cooker combine all the chopped vegetables with yellow moong dal, sambar masala powder, turmeric and tamarind. Mix well, add 2 cups of water, and pressure cook for 5 whistles.

3. Once cooked, turn off the flame and allow the pressure to subside.

4. Now remove the cooker weight and the cooker lid.

5. Mash all ingredients using paruppu mathu, a wooden ladle, or a potato masher.

6. Now place the dal on the stove over a moderate flame and add the remaining 2 cups of water asafoetida, and salt and mix well.

7. To Temper - Heat oil in a pan and add mustard seeds, let them splutter and then add dry red chilli fry for a few seconds.

8. Add the tempering to the cooked dal. Turn off the flame.

9. Finally, garnish with curry leaves and coriander leaves.
