Pottukadalai/Roasted gram dal is obtained from a desi (local) variety of Chickpea (Kala chana) which is a smaller and brown colour seed. Kala chana (brown chickpea) is processed by removing the shell, splitting them in half, and roasting to give it a deeper taste and crunchy texture.

INGREDIENTS

Pottukadalai/Roasted gram dal - 1 cup
Sugar - 1 cup
Cardamom pods - 3 (seeds only)
Ghee - 1/4 cup
Cashew nuts - 12
Salt - a pinch

INSTRUCTIONS

1. To begin making the pottukadalai maavu urundai recipe - In a dry mixer grinder, add pottukadalai/roasted gram dal and cardamom seeds and grind it to a fine powder.

2. Transfer to a plate.

3. In the same mixer grinder, add sugar and grind it to a fine powder.

4. Transfer to a plate.

5. Combine Pottukadalai flour, powdered sugar and a pinch of salt.

6. Now sieve the dry flour mixture in a wide bowl.

7. Heat ghee in a pan and add chopped cashew nuts to fry until golden.

8. Add ghee and cashew nuts to the flour mixture and slowly mix using a ladle.

9. Now touch the mixture to see, if the hand is bearable. Use your hand to mix further.

10. Now shape the dough into equal size round balls.

11. Allow it to rest for 10-15 minutes.

12. Pottukadalai maavu urundai recipe is ready.
