Arai keerai poriyal recipe is a simple and basic stir fry recipe made with arai keerai/spleen amaranth as the main ingredient and tempered with oil, cumin seeds, dry red chilli and salt. The Arai keerai poriyal recipe also includes small onion (shallots) and freshly grated coconut as the flavouring ingredients.

Arai Keerai Poriyal Ingredients
Arai Keerai/Spleen Amaranth - 1 bunch or 4 cups (chopped and tightly measured)
Small Onions (Shallots) - 15
Freshly Grated Coconut - 1/4 cup
Salt - to taste
FOR TEMPERING
Oil - 1 tablespoon
Mustard Seeds - 1/4 teaspoon
Cumin Seeds - 1/2 teaspoon
Dry Red Chilli (halved) - 3
INSTRUCTIONS
To prepare arai keerai poriyal or amaranth stir fry:
1. Start by cleaning the arai keerai or amaranth greens. Pick the fresh leaves with tender stems, soak them in water with a pinch of turmeric and rock salt for 5 to 20 minutes, and then wash them in 4 to 5 exchanges of water.
2. Drain the water completely and chop the keerai or green leaves.
3. To cook - heat oil in a deep Kadai over a moderate flame, add mustard seeds and cumin seeds, allow to splutter and then add red chilli, chopped small onions stir fry for 1 minute.
4. Add chopped arai keerai and 1/4 cup of water and stir fry for 1-2 minutes. Allow them to cook for 2-3 minutes, stirring occasionally.
5. Once the keerai becomes soft, add salt and stir again. Once all the water is completely evaporated from the keerai, turn off the flame.
6. Finally, add the freshly grated coconut and mix well.
7. Your Arai Keerai Poriyal is now ready to serve.
