Chettinad Mushroom Pepper Masala Recipe/Kalan Milagu Varuval Recipe/Mushroom Masala Recipe is a simple, spicy and flavourful South Indian style gravy recipe. You can easily make this Chettinad mushroom pepper masala recipe/Kalan milagu varuval recipe within 15 minutes and serve it as a side for rice, chapati or any South Indian bread.

INGREDIENTS

Button Mushroom/Kalan - 400 gms or 2 Pockets
Big Onion (chopped) - 2
Tomato (chopped) - 2
Ginger and Garlic Paste - 1 tablespoon
Salt - to taste
Red Chilly Powder - 1 teaspoon
Turmeric Powder - 1/2 teaspoon
Coriander powder - 2 tablespoons

To Grind

Peppercorns - 1 tablespoon
Fennel Seeds - 2 teaspoons

To Temper

Sesame Oil - 3 tablespoons
Cinnamon - 1 piece
Cloves - 1
Fennel Seeds - 1/2 teaspoon

To Garnish

Curry Leaves (chopped) - 1 sprig

INSTRUCTIONS

1. To begin making the Chettinad Mushroom Pepper Masala Recipe - Firstly, clean and wash the Button Mushrooms and rough chop them.

2. To Dry Roast - Heat a pan over a moderate flame and add peppercorns and dry roast for 1 minute or until pops, transfer to a plate. In the same pan add fennel seeds and dry roast for a few seconds or until colour changes. Transfer to a plate.

3. Allow both ingredients to cool completely.

4. To Grind - In a mortar and pestle, add roasted peppercorns and fennel seeds and crush them to a coarse to a fine powder. You can also grind this in a mixer grinder.

5. To cook - Heat oil in a pan over a moderate flame and add fennel seeds, cinnamon and clove fry for a few seconds.

6. Add chopped onion and saute for 2-3 minutes until transparent and then add ginger and garlic paste and saute for 1 minute.

7. Now add tomato and saute for 1 minute.

8. Add turmeric powder, coriander powder, red chilli powder and salt and saute for 1 minute and then add chopped mushrooms and saute for 2 minutes.

9. Once mushrooms start to release water close the lid and cook for 2-3 minutes.

10. Now open the lid and mix the mushroom masala.

11. Finally, add ground pepper and fennel powder mix well and cook for 1 minute.

12. Turn off the flame and add chopped curry leaves.
