What is Pongal?
Pongal is a popular South Indian dish made with freshly harvested rice along with pasi paruppu/yellow moong dal. Pongal recipes can be made into a sweet or savoury recipes. Freshly harvested rice/raw rice is the main ingredient used to make the Pongal recipe. However, sometimes millets can be substituted for making the Pongal recipes. Foxtail Millet Sweet Pongal Recipe/Thinai Arisi Sweet Pongal Recipe/Thinai Sakkarai Pongal Recipe is a delicious, flavourful and traditional South Indian sweet recipe. It is a popular millet-based sweet recipe. You can easily make this Foxtail Millet Sweet Pongal Recipe/Thinai Arisi Sweet Pongal Recipe within 30 minutes and serve it as a breakfast, dessert or snack recipe.

INGREDIENTS
Thinai Arisi/Foxtail Millets - 1 cup
Pasi Paruppu/Yellow Moong Dal - 1/4 cup
Water - 4 cups
Milk - 1/2 cup
Jaggery - 350 gms
Salt - a pinch
Cardamom Powder - 1 teaspoon
Ghee - 1/2 cup
Cashew Nuts - 10
Raisins - 10
INSTRUCTIONS
1. To begin making the Foxtail Millet Sweet Pongal Recipe/Thinai Arisi Sweet Pongal Recipe - Firstly, clean and winnow the foxtail millet/thinai arisi to remove dust and debris.
2. To Roast - Heat a pan over a moderate flame and add yellow moong dal and dry roast for 1-2 minutes until a nice aroma appears and transfer to a plate.
3. In the same pan add foxtail millet/thinai arisi and dry roast for 2-3 minutes and transfer to a plate.
4. Allow both ingredients to cool completely.
5. Now wash both the ingredients together in 3-4 exchanges of water.
6. To cook - In a pressure cooker, add washed dal, millet, 3 cups of water, milk, a pinch of salt and 1 teaspoon ghee and pressure cook for 4 whistles.
7. Meanwhile, heat a pan over a moderate flame and add a cup of water, and jaggery and allow the jaggery to melt completely. Once done, turn off the flame and strain the jaggery syrup carefully.
8. Now open the pressure cooker and add jaggery syrup and cook over a moderate flame for 6-7 minutes.
9. To Fry - Heat a tablespoon of ghee and add cashew nuts and fry to golden and add raisins and fry for a few seconds.
10. Now add fried nuts to foxtail millet Pongal.
11. Finally add cardamom powder and remaining ghee mix all the ingredients well. Turn off the flame.
12. Foxtail Millet Sweet Pongal Recipe/Thinai Arisi Sweet Pongal Recipe/Thinai Sakkarai Pongal Recipe is ready.

4. Sweet Pongal/Sakkarai Pongal needs a good amount of ghee. So use accordingly.
