How to make Kootanchoru Recipe?/Kootanchoru Recipe/Tirunelveli Special Kootanchoru Recipe

Kootanchoru Recipe/Tirunelveli Special Kootanchoru Recipe is an uncomplicated, traditional and rustic one-pot meal prepared with rice, lentils, vegetables, spices and fresh leafy greens. It is a simple recipe you can easily prepare within an hour and serve as a lunch meal or picnic meal.

Timing - 45 minutes

INGREDIENTS

Rice - 1 cup
Toor Dal - 1/2 cup
Mixed Country Vegetables - 3 cups
Onion - 1
Tomato - 1
Turmeric powder - 1/2 spoon
Tamarind - lemon size
Drumstick leaves - 1 cup (tightly measured)
Coriander leaves - 2 tablespoons
Water - 5 cups

FOR PASTE

Small onions - 5
Garlic - 2
Jeera - 1 teaspoon
Dry Red Chilli - 6
Coconut (grated) - 1/2 cup

FOR TEMPERING

Sesame Oil - 2 tablespoons
Mustard and Urad Dal - 1 teaspoon
Asafoetida - 1/2 teaspoon

INSTRUCTIONS

1. To begin making the Kootanchoru Recipe - Firstly, wash rice and toor dal together and soak for 30 minutes. Soak the tamarind in a cup of water. Wash and rough chop the mixed vegetables. Wash and strain the fresh greens. Keep all the ingredients ready.

2. To Paste - In a mixer grinder, add grated coconut, small onions, garlic, jeera and dry red chilli and grind to a fine paste.

3. To Cook - In a pressure cooker, add soaked rice and lentils, turmeric powder, chopped vegetables, leafy greens salt and 4 cups of water and cook for 5 whistles.

4. Turn off the flame and allow the pressure to subside gradually.

5. Open the pressure cooker, add the ground paste and tamarind water and cook for 2-3 minutes.

6. Meanwhile, heat oil in a pan add mustard seeds, let them splutter and add chopped onion and fry to golden brown add to the pressure cooker and mix well.

7. Finally add asafoetida and coriander leaves mix well and serve.

8. Kootanchoru Recipe/Tirunelveli Special Kootanchoru Recipe is ready.
