Kalkandu Sadam Recipe also includes milk as the flavouring ingredient for a rich creamy Kalkandu Sadam Recipe/Kalkandu Pongal Recipe.

INGREDIENTS

Raw Rice - 1 cup
Kalkandu/Mishri/Sugar Candy - 1 1/2 cups
Milk - 1 cup
Water - 2 cups
Ghee/Clarified Butter - 1/4 cup
Saffron - a pinch
Cashew nuts - 10
Raisins - 8
Salt - a pinch

INSTRUCTIONS

1. To begin making the Kalkandu Sadam Recipe - Firstly, clean and wash the raw rice and keep all the ingredients ready.

2. To Cook - In a pressure cooker and washed rice, milk, water, and 1 teaspoon of ghee mix well. Close the lid and cook for 4 whistles.

3. Remove from heat and allow pressure to reduce gradually.

4. To Grind - Meanwhile, in a mixer grinder add kalkandu/mishri/sugar candy and grind it to a fine powder.

5. Now open the cooker and return to heat over a moderate flame.

6. Add powdered kalkandu/sugar candy/mishri and cook until it dissolves and is mixed well with the rice. remove from the heat.

7. To Fry- Heat ghee in a pan and add cashew nuts fry until golden and then add raisins and fry for a few seconds.

8. Now add rice, salt and saffron stir well and cook for 1-2 minutes. Turn off the flame.

9. Kalkandu Sadam Recipe/Kalkandu Pongal Recipe is ready.
