INGREDIENTS

Black Rice/Kavun Arisi/Karuppu Kavuni Rice - 1 1/2 cups
Sugar - 1 1/2 cups
Coconut (Grated) - 1 cup
Ghee/Clarified Butter - 2 tablespoons
Water - 5 cups

INSTRUCTIONS

1. To begin making the kavuni arisi/Chettinad kavuni arisi sweet recipe/Black rice pudding Recipe - Firstly, clean the black rice/kavuni arisi and wash them well in 2-3 exchanges of water.

2. To Soak - In a deep bowl, add washed black rice and 5 cups of water and soak for 8 hours or overnight.

3. To Cook - Heat a pressure cooker over a moderate flame and add soaked rice along with the water and cook for 8 whistles.

4. Once 8 whistles appeared turn off the flame and allow pressure to settle.

5. Open the lid and check for the doneness of the rice (cooked rice should be soft and easy to mash). If it is not cooked, add a cup of water and again cook for 2-3 whistles. Once done turn off the flame and allow pressure to settle.

6. Now open the lid and again check for the doneness, if it is cooked, remove excess water and mash the black rice/kavuni arisi.

7. Immediately add sugar, freshly grated coconut, and ghee mix well.

8. Kavuni Arisi/Chettinad Kavuni Arisi Sweet Recipe/Kavuni Arisi Sweet Recipe/Black Rice Pudding/Sweet Kavuni Arisi is ready.
