Mango pachadi recipe/Pachai manga pachadi recipe/Ugadi pachadi recipe is a traditional recipes made throughout the southern parts of India. It is a popular pachadi recipe/chutney recipe. You can easily make this recipe within 15 minutes and serve it as a side dish for steamed rice, idli, dosai and even chapati.

INGREDIENTS
Raw Mango/Pachai Mangai (peeled) - 1
Jaggery - 1/2 cup
Red chilli powder - 1 teaspoon
Turmeric - 1/2 teaspoon
Asafoetida - 1 pinch
Salt - to taste
Water - 1/2 cup
FOR TEMPERING
Sesame oil - 1 tablespoon
Mustard seeds - 1/2 teaspoon
Dry red chilli (halved) - 1
Curry leaves - 1 sprig
SECOND TEMPERING
Sesame oil - 1 tablespoon
Fresh neem flower or Dried neem flower - 1 teaspoon
INSTRUCTIONS
1. To begin making the mango pachadi recipe/ugadi pachadi - Firstly, chop the mango to your desired size. Keep all the ingredients ready.
2. To Cook - Heat 1 tablespoon of oil in a pan over a moderate flame and add mustard seeds and let them crackle.
3. Now add dry red chilli, curry leaves and chopped raw mango and saute for 1 minute.
4. And then, add red chilli powder, turmeric powder, asafoetida and salt mix once and add 1/2 cup of water mix again and allow to cook for 4-5 minutes.
5. Now add 1/2 cup of jaggery and allow it to melt. Once melted, gently mix all the ingredients and cook for 1-2 minutes. Turn off the flame.
6. To Temper - Heat a tadka pan and add 1 tablespoon of sesame oil and add a spoon of fresh or dried neem flower and fry for a few seconds. Turn off the flame.
7. Now add the tadka to the pachadi and gently mix.
8. Mango Pachadi Recipe/Ugadi Pachadi Recipe/Pachai Manga Pachadi Recipe is ready.
You can serve this Mango Pachadi Recipe/Ugadi Pachadi Recipe with steamed rice, idli, dosai and even chapati.
PICTORIAL INSTRUCTIONS
1. To begin making the mango pachadi recipe/ugadi pachadi - First, Peel and chop the mango into your desired size. Keep all other ingredients ready.
2. To Cook - Heat 1 tablespoon of oil in a pan over a moderate flame and add mustard seeds and let them crackle.
3. Now add dry red chilli, curry leaves and chopped raw mango and saute for 1 minute.

1. Mango pachadi tastes good with the sour-tasting raw mango so choose a sour-tasting mango.
2. You can adjust the spice level and also the sweet level according to your preference.
