Ulundu Choru is a rice-based traditional dish from South India, particularly from the state of Tamilnadu. It is one of the popular rice dishes made throughout the Tirunelveli (Nellai) and Kanyakumari districts of Tamilnadu state.
Ulundu Choru is a simple and healthy one-pot meal prepared with rice, urad dal and spices. What is unique about this Ulundu Choru Recipe is the use of Split urad dal with skin. Ulundu Choru Ingredients/Urad Dal Rice Ingredients
Ulundu Choru/Urad Dal Rice is a simple and easy recipe made with rice preferably idli rice and split urad dal with skin as the main ingredients and flavoured with various spices like garlic, fenugreek seeds, cumin seeds, dry red chilli, dry ginger powder, curry leaves and salt. Ulundu Choru/Urad Dal Rice recipe also includes freshly grated coconut and sesame oil for the taste and aroma.

INGREDIENTS
Idli Rice - 1 cup
Split Urad Dal With Skin - 1/2 cup
Water - 5 cups
Coconut (grated) - 1/2 cup
FOR SEASONING
Garlic - 8
Cumin Seeds - 1 teaspoon
Fenugreek Seeds - 1/4 teaspoon
Dry Ginger Powder - 1/2 teaspoon
Dry Red Chilli - 1
Salt - to taste
Sesame Oil - 2 tablespoons
INSTRUCTIONS
1. To begin making the Ulundu Choru Recipe/Urad Dal Rice Recipe - Heat a pan over a moderate flame and add split urad dal with skin and dry roast for 2-3 minutes or until a nice aroma appears.
2. Transfer to a bowl along with rice and wash together for 3-4 exchanges of water and soak for 10 minutes.
3. To Cook - Heat sesame oil in a pressure cooker over a moderate flame and add garlic fry for a minute and then add dry red chilli, cumin seeds and fenugreek seeds and fry for a few seconds.
4. Meanwhile, boil 5 cups of water in a pan.
5. Now add soaked rice and urad dal, salt, grated coconut and dry ginger powder to the pressure cooker and fry for a minute then add boiling water and mix well.
6. Check for the salt and close the lid and keep the flame at medium heat and pressure cook for 5 whistles.
7. Turn off the flame and allow the pressure to subside gradually.
8. Open the lid and gently mix the rice.

Important tips to make a tasty Ulundu Choru Recipe
1. If you do not have idli rice you can use any type of rice for this recipe. If you are using regular parboiled rice make sure to use water accordingly.
2. Ulundu Choru should be slightly mushy so use the water accordingly.
(For idli rice, water should be 1:2.5 to 3 ratio and for parboiled rice, water should be 1:2 to 2.5 ratio).
