Kozhukattai or Kolukattai is a popular and traditional south Indian sweet dumpling recipe. It is typically prepared with processed rice flour or processed millet flour and stuffed with various sweet fillings like thengai pooranam (coconut sweet stuffing), ellu pooranam (sesame seed sweet stuffing), kadalai paruppu pooranam (split bengal gram or chana dal sweet stuffing), pasi paruppu pooranam (yellow moong dal sweet stuffing) and many more. Kozhukattai also can be stuffed with savoury fillings.
Kozhukattai is a special dish and is specially made during Vinayagar Chaturthi Festival/Ganesh Chaturthi Festival. The Kozhukattai recipe is popularly known as Modak or Modakam in the northern parts of India.

In this post, I've shared the Pasi Paruppu Pooranam Kozhukattai recipe made with store-bought rice flour. You can use any store-bought rice flour or kozhukattai rice flour to make this recipe. For the kozhukattai shape, I followed the traditional and rustic handmade kozhukattai shape. If you are a beginner or new to the kozhukattai, you can use the kozhukattai mould to shape your kozhukattai.

How to make Pasi Paruppu Pooranam Kozhukattai Recipe?/How to make Moong Dal Modak Recipe?

INGREDIENTS
For Rice Flour Dough
Rice Flour - 1 cup
Water - 1 1/2 to 1 3/4 cups
Salt - 1/4 teaspoon
Sugar - 1/2 teaspoon
Ghee - 1/2 teaspoon
For Pasi Paruppu Pooranam
Pasi Paruppu/Yellow Moong Dal - 50 gms
Grated Coconut - 3/4 cup
Sugar - 3/4 cup
Cardamom Powder - 1/2 teaspoon
Salt - a pinch
For Steaming Kozhukattai
Ghee - as needed
INSTRUCTIONS
Pasi Paruppu Pooranam Kozhukattai Recipe/Moong Dal Modak Recipe is a four-part of process. They are -
1. To prepare Stuffing - Pasi Paruppu Pooranam
2. To prepare - Rice Flour Kozhukattai Dough
3. To shape - Kozhukattai
4. To steam - Kozhukattai
To prepare Stuffing - Pasi Paruppu Pooranam
1. Heat a pan and add pasi paruppu/yellow moong dal and dry roast for a few seconds. Turn off the flame. Wash the yellow moong dal in 2-3 exchanges of water.
2. To Boil - Heat a pan add 1 cup of water and washed yellow moong dal and allow to boil. Cook until soft.
3. Heat a pan over a low flame and add grated coconut, sugar and 1/4 cup of water stir continuously until sugar melts.
4. Now add boiled pasi paruppu/yellow moong dal and a pinch of salt and keep stirring until the moisture from the sugar dries. Turn off the flame immediately. Do not overcook the pooranam/stuffing otherwise, it will harden.
5. Finally, add cardamom powder and mix well and allow them to cool.
To Prepare Kozhukattai Dough
1. Heat a deep kadhai over a low flame and add 1 1/2 cups of water and allow to boil. Once the water starts to boil, add salt, sugar and ghee and give them a mix. Now add rice flour and continuously mix for 4-5 minutes.
2. Once the rice flour dough is cooked, it comes together while mixing. Keep the flame very low and dip your fingers in the water and touch the dough.
3. If it is cooked, rice flour dough will not stick to your fingers. If the rice flour dough is sticking to your finger.
4. Keep mixing and after a few minutes again check them.
5. Once done, turn off the flame.
6. Close with the lid and allow to cool for 5-7 minutes.
To Shape Rice Kozhukattai/Arisi Maavu Kozhukattai
1. Grease your hands with ghee and take a lemon size of the ball from the dough and roll it into an even round shape without any cracks.
2. Press the dough into a flat round shape, keeping the edges thin and the centre slightly thick.
3. Place the pooranam/stuffing in the centre and bring the edges into the centre and join them tightly to form a neat round shape.
4. Repeat the above steps for the remaining dough in batches.
To Steam The Ragi Kozhukattai
1. Heat a kozhukattai steamer with 2 cups of water. Close it with a lid and allow it to boil.
2. Meanwhile, on a steaming plate grease it with some ghee and arrange the pasi paruppu pooranam kozhukattai. While arranging pasi paruppu pooranam kozhukattai, leave some space in between kozhukattai.
3. Place the steaming plate on the steamer and steam the kozhukattai for 10 minutes.
4. Once the pasi paruppu pooranam kozhukattai is steamed, it releases a nice cooked aroma.
5. Turn off the flame. Open the lid and wait for 1 minute.
6. Finally, carefully remove pasi paruppu pooranam kozhukattai from the plate.
7. Keep repeating the above steps for the remaining pasi paruppu pooranam kozhukattai.
