What is Kozhukattai?

Kozhukattai or Kolukattai is a popular and traditional south Indian sweet dumpling recipe. It is typically prepared with processed rice flour or processed millet flour and stuffed with various sweet fillings like thengai pooranam (coconut sweet stuffing), ellu pooranam (sesame seed sweet stuffing), kadalai paruppu pooranam (split bengal gram or chana dal sweet stuffing), pasi paruppu pooranam (yellow moong dal sweet stuffing) and many more. Kozhukattai also can be stuffed with savoury fillings.

Kozhukattai is a special dish and is specially made during Vinayagar Chaturthi Festival/Ganesh Chaturthi Festival. The Kozhukattai recipe is popularly known as Modak or Modakam in the northern parts of India.

Ragi Kozhukattai Recipe is made with processed ragi flour. You can use any store-bought processed ragi kozhukattai flour or ragi flour. I used store-bought ragi flour to make my ragi kozhukattai. Though it is store-bought ragi flour, I got a very soft ragi kozhukattai. So you use any ragi flour to make the ragi kozhukattai recipe.

For ragi kozhukattai stuffing, I used very traditional sweet stuffing - Thengai Pooranam/Coconut Sweet Stuffing. Thengai Pooranam/Coconut Sweet Stuffing is made with equal parts of grated coconut and jaggery. I also used a tablespoon of coarsely crushed roasted chana dal/pottukadalai/fried gram for a crunchy texture.

How to make Ragi Kozhukattai Recipe?/How to make Finger Millet Kozhukattai Recipe?

Ragi Kozhukattai Recipe/Finger Millet Kozhukattai Recipe is a tasty, toothsome and delightful south Indian sweet dumpling recipe. INGREDIENTS

For Kozhukattai Dough

Ragi Flour/Finger Millet Flour - 2 cups
Water - 2 1/2 cups
Salt - 1/4 teaspoon
Sugar - 1/2 teaspoon
Ghee - 1 teaspoon

For Stuffing

Grated Coconut - 1 cup (tightly measured)
Jaggery Powder - 1 cup
Coarsely Crushed Pottukadalai/Roasted Chana Dal - 1 tablespoon
Salt - a pinch
Ghee - 1 tablespoon
Cardamom Powder - 1 teaspoon

To Steam Kozhukattai

Ghee - as needed

INSTRUCTIONS

Ragi Kozhukattai Recipe/Finger Millet Kozhukattai Recipe is a four-part of process. They are -

1. To prepare Stuffing - Thengai Pooranam
2. To prepare Ragi Kozhukattai Dough
3. To shape Kozhukattai
4. To steam Kozhukattai

To Prepare Stuffing

1. Heat a pan over a moderate flame and add jaggery powder with 1 tablespoon of water. Melt the jaggery to make jaggery water. Once the jaggery is melted, turn off the stove and strain the jaggery water.

2. Heat a pan over a moderate flame and add grated coconut and dry roast for a minute. And then add jaggery water and stir the ingredients and cook until the moisture from the jaggery begins to dry.

3. Turn off the flame immediately. Do not overcook as then the jaggery will harden.

4. Finally, add a tablespoon of crushed pottukadalai, ghee, a pinch of salt and cardamom powder mix well and allow to cool the mixture completely.

To Prepare Kozhukattai Dough

1. Heat a deep kadhai over a low flame and add 21/2 cups of water and allow to boil. Once the water starts to boil, add salt, sugar and ghee and give them a mix. Now add ragi flour and continuously mix for 4-5 minutes.

2. Once the ragi dough is cooked, it comes together while mixing. Keep the flame very low and dip your fingers in the water and touch the dough.

3. If it is cooked, ragi dough will not stick to your fingers. If the ragi dough is sticking to your finger.

4. Keep mixing and after a few minutes again check them.

5. Once done, turn off the flame.

6. Close with the lid and allow to cool for 5-7 minutes.

To Shape Ragi Kozhukattai

1. Use Kozhukattai Mould to shape Ragi Kozhukattai - Grease the kozhukattai mould with a bit of ghee all over the mould.

2. Take a lemon size ball and roll it into a cylindrical shape and insert it inside the kozhukattai mould. Press all the sides of the mould evenly, so that cavity or space is made in the centre.

3. Now add the thengai pooranam stuffing.

4. And then cover the bottom with a small piece of dough. Gently press it to seal the kozhukattai.

5. Now gently remove the kozhukattai from the mould.

6. Keep repeating the above steps for the remaining dough in batches.

To Steam The Ragi Kozhukattai

1. Heat a kozhukattai steamer with 2 cups of water. Close it with a lid and allow it to boil.

2. Meanwhile, on a steaming plate grease it with some ghee and arrange the ragi kozhukattai. While arranging ragi kozhukattai, leave some space in between kozhukattai.

3. Place the steaming plate on the steamer and steam the kozhukattai for 5 minutes.

4. Once the ragi kozhukattai is steamed, it releases a nice cooked aroma.

5. Turn off the flame. Open the lid and wait for 1 minute.

6. Finally, carefully remove ragi kozhukattai from the plate.

7. Keep repeating the above steps for the remaining ragi kozhukattai.

To Prepare Ragi Kozhukattai Maavu Ragi Kozhukattai Dough -

1. Heat a deep kadhai over a low flame and add 2 1/2 cups of water and allow to boil. Once the water starts to boil, add salt, sugar and ghee and give them a mix. Now add ragi flour and continuously mix for 4-5 minutes.

2. Once the ragi dough is cooked, it comes together while mixing. Keep the flame very low and dip your fingers in the water and touch the dough.

3. If it is cooked, ragi dough will not stick to your fingers. If the ragi dough is sticking to your finger.

4. Keep mixing and after a few minutes again check them.

5. Once done, turn off the flame.
