What is Mappillai Samba Sadam/Mappillai Samba Rice?

Mappillai Samba Sadam is a traditional and very old Indian red rice dish that is hailed from the state of Tamilnadu. Mappillai Samba Sadam Recipe is prepared with the red rice variety of rice grains. Like the other varieties of red rice grains, Mappillai Samba Rice is also hardy and thick rice grain. So it needs to be soaked before cooking. Being thick and hardy rice, it takes a longer time to cook. To reduce the cooking time, Mappillai Samba Rice is always pre-soaked for a minimum of 2 hours to a maximum of 8 hours or overnight.

You can cook "Mappillai Samba Rice/Mappillai Samba Arisi" in an open pot or pressure cooker method to cook. In both ways, Mappillai Samba Rice get cooks perfectly. However, I prefer an open pot method to cook Mappillai Samba Rice. Because an open pot method of cooking is very convenient to check the doneness of the rice and also Mappillai Samba Rice is traditionally cooked in this way. In this post, I have shared an open pot method of cooking Mappillai Samba Rice/Mappillai Samba Arisi.

How to cook Mappillai Samba Rice?/How to make Mappillai Samba Sadam?

Mappillai Samba Sadam Recipe is a tasty, healthy and very ancient Indian red rice recipe. You can easily make this Mappillai Samba Sadam within an hour and serve it with any vegetarian or non-vegetarian dishes.

Cuisine - South Indian
Serving - 2 to 3
Timing - 2 hours (for soaking) + 1 hour (for cooking)

INGREDIENTS

Mappillai Samba Rice/Mappillai Samba Arisi - 1 cup
Salt - to taste
Water - 10 cups

INSTRUCTIONS

1. To begin making the Mappillai Samba Sadam Recipe - Firstly, clean the Mappillai Samba Rice by removing any dust and debris.

2. Now in running water, wash the Mappillai Samba Rice in 2-3 exchanges of water. Drain the water completely from the rice.

3. To Soak the rice - Heat 4 cups of water in a pan and allow water to boil once. Turn off the flame.

4. Now add washed Mappillai Samba Rice and Soak for 2 hours.

5. To cook the rice - In a rice pot, add the remaining water and the soaked water (drain the water from the soaked rice and add) add salt to taste and allow the water to boil.

6. Once the water is boiling, add the soaked Mappillai Samba Rice and gently stir the rice.

7. Now close the lid halfway to the rice pot and cook for 30-40 minutes.

8. Keep the flame moderate throughout cooking and stir the Mappillai Samba Rice in between the cooking.

9. After 30 minutes of cooking, take the rice from the pot and check the doneness. If rice is not cooked, keep cooking the rice.

10. Keep checking the doneness of the rice.

11. Once the rice is completely cooked, you can easily mash the rice between your fingers.

12. Once the rice is cooked, drain the excess water completely from the Mappillai Samba Sadam.

13. Within 35-45 minutes, Mappillai Samba Sadam is ready.

You can serve Mappillai Samba Sadam with any vegetarian or non-vegetarian dishes.
