How to make crispy Pavakkai Chips Recipe at home?/How to make crispy Bitter Gourd Chips at home?

INGREDIENTS
Bitter Gourd/Pavakkai - 1
Oil - for deep frying
Butter Milk - 1 cup
FOR MARINATION
Chickpea Flour/Besan Flour/Kadalai Maavu - 2 tablespoons
Rice Flour - 1 tablespoon
Corn Flour - 1 tablespoon
SPICES
Red Chilli Powder - 1 teaspoon
Coriander Powder - 1/2 teaspoon
Turmeric Powder - 1/4 teaspoon
Pepper Powder - 1/4 teaspoon
Ginger and Garlic Paste - 1 teaspoon
Salt - to taste
Curry Leaves - 1 sprig
INSTRUCTIONS
1. To begin making the Pavakkai Chips Recipe/Bitter Gourd Chips Recipe - Firstly, wash the large-size bitter gourds in running water. Completely dry the water from it and chop it into thin roundels.
2. To Soak - In a deep bowl, place chopped bitter gourd/pavakkai and sprinkle 1/2 teaspoon of water and pour a cup of buttermilk mix well and soak for 5 minutes.
3. To Marinate - In a wide bowl, add chickpea flour, rice flour, corn flour, red chilli powder, coriander powder, turmeric powder, pepper powder and salt mix well using the whisk to bring it all together.
4. Now remove the bitter gourd from the buttermilk and squeeze out excess water from it.
5. Now add bitter gourd/pavakkai to the marination.
6. Add ginger and garlic paste.
7. Now gently mix all the ingredients together.
8. If necessary, sprinkle 1-2 tablespoons of water to coat the marination with bitter gourds.
9. To Fry - Heat oil in a kadhai to deep fry the bitter gourds over a high flame, once the oil is hot drop a few bitter gourds and fry them to a golden red.
10. Once the bitter gourd is fried to golden red and frying sounds subside, remove from the oil and place on the tissue paper to drain the excess oil.
11. Repeat the above 9, and 10th steps to fry the remaining bitter gourds. Finally, fry the curry leaves and mix them with pavakkai chips.
12. Pavakkai Chips Recipe/Bitter Gourd Chips Recipe is ready.
