Thokku is typically served as an accompaniment to rice or any vegetarian and non-vegetarian lunch meals and is also served as a side dish for tiffin items like idli, dosai, uthappam, kal dosai or even chapati.

Generally, thokku is cooked with fresh vegetables like onion, garlic, tomato, mango or any fresh green leaves and is particularly flavoured with tamarind, red chilli powder, salt and other spices. Thokku recipe is also mostly seasoned with a good amount of sesame oil, coconut oil or refined oil.

INGREDIENTS

Senna Kunni Karuvadu/Chenna Kunni Karuvadu/Dried Baby shrimp - 1/2 cup
Small Onion - 30 nos (or) Onion - 2
Tomato - 2
Green Chilli (slit) - 1
Ginger and Garlic paste - 1/2 teaspoon
Garlic - 4

FOR MASALA POWDERS

Red Chilli Powder - 1 teaspoon
Turmeric Powder - 1/4 teaspoon
Pepper powder - 1 teaspoon
Salt - to taste

FOR SEASONING

Oil - 3 tablespoons
Mustard Seeds - 1/2 teaspoon
Fennel Seeds - 1/2 teaspoon
Fenugreek Seeds - 6 to 7
Curry Leaves - 1 sprig
Coriander Leaves (chopped) - 1 tablespoon

INSTRUCTIONS

1. To begin making the Senna Kunni Karuvadu Thokku Recipe/Dried Baby Shrimp Gravy Recipe - Firstly, you need to properly clean the senna kunni karuvadu/dried baby shrimp before cooking.

2. Once you properly cleaned the senna kunni karuvadu, soak them in a cup of water for 15 minutes.

3. To Cook - Heat a mud pot or kadhai over a moderate flame and add oil, and mustard seeds and allow to splutter then add fennel seeds, fenugreek seeds, garlic and curry leaves saute for a few seconds.

4. And then add chopped onions and fry until translucent.

5. Now add ginger and garlic paste fry for a few seconds then add chopped tomato, green chilli and salt to taste and cook until mushy.

6. Add red chilli powder and turmeric powder saute for a few seconds and add a cup of water mix well.

7. Keep the flame low, close the kadhai with a lid and cook for 5 minutes or until oil separates from the gravy. Don't forget to mix in between cooking.

8. Now squeeze the water from the soaked senna kunni karuvadu and add it to the gravy and mix well. If water is necessary add 1/4 cup of water and cook for 3-5 minutes.

9. Finally, add a teaspoon of pepper powder and mix well. Once the oil separates from the senna kunni karuvadu thokku. Turn off the flame and sprinkle coriander leaves on top mix well. Close with the lid. Keep it warm until serving.
