Brinji Rice/Brinji Sadam

Brinji Rice/Brinji Sadam is a traditional rice dish that is hailed from Tamil cuisine. It is one of the popular vegetarian rice recipes typically served at weddings and family functions.

Brinji Rice/Brinji Sadam is prepared with basmati rice or seeraga samba recipe or even parboiled rice as the main ingredient and specifically flavoured with spices like fennel seeds, bay leaves and star anise. It is also specially flavoured with coconut milk. Brinji Rice also includes vegetables like onion, tomato, carrot, beans, green peas, potato, ginger, garlic, green chilli, mint, coriander and curry leaves.

In brinji rice, sometimes soya chunks/meal makers are also added as an optional ingredient. In the Chennai-style brinji rice recipes, soya chunks are specifically added with the combination of green peas. I prefer to add soya chunks to my brinji recipe. Soya chunks add texture to the brinji rice.

Brinji Rice is a simple, tasty and flavourful open-pot rice dish. It is one of the popular one-pot rice dishes. You can easily make this brinji rice recipe within an hour and serve it as a healthy lunch meal.

INGREDIENTS

Basmati Rice - 1 cup
Coconut Milk - 2 cups
Soya Chunks - 15 nos
Onion - 1
Tomato - 1
Carrot - 1
Beans - 5
Potato - 1/2
Peas - 1/4 cup
Green Chilli - 3
Ginger and Garlic paste - 1 tablespoon
Mint Leaves - 1 handful
Coriander Leaves - 1 handful
Lemon - 1/2

SPICES

Fennel Seeds - 1 teaspoon
Star Anise - 1
Bay Leaves - 2
Red Chilli Powder - 1 teaspoon
Coriander powder - 1 heaped teaspoon
Turmeric Powder - 1/2 teaspoon
Salt - to taste
Oil - 2 tablespoons
Ghee - 1 tablespoon

INSTRUCTIONS

1. To begin making the Brinji Rice/Brinji Sadam recipe - First, wash the basmati rice in 3-4 exchanges of water and soak for 20 minutes. Wash all the vegetables (carrot, beans and potato) and chop them into your desired shape preferably in chunks. Chop the onion and tomato into slices. Keep all the ingredients ready.

2. Soak soya chunks in hot for 10 minutes.

3. To Cook - Heat a heavy bottom pot (biryani pot) and add oil and a spoon of ghee add fennel seeds, star anise and bay leaves fry for a few seconds. Then add sliced onion and saute for a minute or until translucent add ginger and garlic paste and saute for a few seconds.

4. Now add tomato, green chilli, mint and coriander leaves and saute for a few seconds.

5. Add chopped vegetables and turmeric powder and saute for a minute.

6. Now add red chilli powder, coriander powder and salt and saute for a few seconds.

7. Strain the soya chunks from the water and squeeze out the excess water from it and add to the gravy. Give them a mix.

8. Now add coconut milk and give them a mix. At this stage, check for the salt and spiciness, if needed adjust now.

9. Allow the coconut milk to get heat and do not boil.

10. Drain the water from the soaked rice and add them to the pot. Squeeze the lemon juice and remaining ghee and give them a mix.

11. Keep the flame over medium heat and close the pot with the lid. Allow them to cook for 5 minutes.

12. Meanwhile, heat a tawa for dum cooking.

13. Now place the pot over a tawa and cook for another 5-7 minutes over the lowest flame. Keep any weight on top of the pot.

14. Turn off the flame. Do not disturb the brinji rice for 10 minutes.

15. Brinji Rice/Brinji Sadam is ready.

You can serve this Brinji Rice/Brinji Sadam recipe with vegetable kurma, salna onion raita and boiled egg. This is the perfect open-pot lunch meal or lunch box meal.
