In the southern parts of India, there are different varieties of payasams prepared from rice, wheat, dal, vegetables or even fruits and sweetened with either jaggery or sugar. Payasam can be thick, semi-thick or thin in consistency and is made with coconut milk or full-fat milk.

Nurukku Gothambu Payasam/Broken Wheat Payasam is one among the 5 types of popular Kerala Payasam/Kerala Pradhaman. Kerala Payasam/Kerala Pradhaman is specifically prepared during the Onam festival. Like Pongal/Makar Sankranti, Onam is the annual harvest festival of Kerala state.

As I previously said, Gothambu Payasam is one of the 5 popular types of Kerala payasam/Kerala Pradhaman. Kerala payasam/Kerala Pradhaman includes Ada Pradhaman, Palada Pradhaman, Chaka Pradhaman, Gothambu Pradhaman and Parippu Pradhaman. One or two types of pradhaman/payasam are compulsorily prepared and served during Onam Sadhya Meals/Onam Lunch Meals.

Nurukku Gothambu Payasam is prepared with broken wheat/gothambu rava/gothumai ravai as the main ingredient and is flavoured with coconut milk, jaggery and spice powders like cardamom, cumin and dry ginger. Nurukku Gothambu Payasam also includes ghee, coconut flakes, cashew nuts and raisins as the seasoning ingredients.

How to make Nurukku Gothambu Payasam Recipe?/How to make Broken Wheat Payasam Recipe?

Nurukku Gothambu Payasam/Broken Wheat Payasam/Gothumai Payasam is a delicious and toothsome south Indian payasam/dessert recipe. It is one of the traditional payasam recipes that hailed from Kerala cuisine. You can make this Nurukku Gothambu Payasam/Broken Wheat Payasam recipe within an hour and serve it as a dessert recipe in Onam Sadhya meals.

INGREDIENTS

Broken Wheat/Gothambu Rava/Gothumai Ravai - 1/2 cup
Jaggery Powder - 300 gms
Thick Coconut Milk - 1 cup
Thin Coconut Milk - 2 Cups
Cardamom Powder - 1 teaspoon
Roasted Jeera Powder/Roasted Cumin powder - 1 teaspoon
Dry Ginger Powder - 1 teaspoon
Salt - 1/4 teaspoon
Ghee - 1/2 cup
Coconut Flakes - 1 tablespoon
Cashew Nuts - 10
Raisins - 10
Water - 2 1/2 cups

INSTRUCTIONS

1. To begin making the Nurukku Gothambu Payasam/Broken Wheat Payasam/Gothumai Payasam recipe - keep all the ingredients ready.

2. To Cook Broken Wheat - Heat 1 tablespoon of ghee in a pressure cooker, add broken wheat and dry roast for 1 minute add 2 cups of water and pressure cook for 2 whistles.

3. Turn off the flame immediately. Release the pressure.

4. Strain the excess water from the broken wheat and keep it aside.

5. To Cook Jaggery Water - Heat 1/2 cup of water and add jaggery powder and just melt to extract jaggery water. Once the jaggery is melted, turn off the flame and strain the jaggery water.

6. To Cook Gothambu Payasam - Heat a tablespoon of ghee over a low flame and add cooked broken wheat and saute for a minute and add jaggery water. Keep stirring continuously for 7-10 minutes.

7. Once the broken wheat and jaggery come together add 1 tablespoon of ghee and 1 cup of thin coconut milk and continue stirring then add the remaining coconut milk and continue stirring for 4-5 minutes.

8. Now add thick coconut milk, cardamom powder, dry ginger powder, roasted cumin powder and salt.

9. Stir for a few seconds and turn off the flame.

10. Heat ghee in a pan, fry cashew nuts, raisins and coconut flakes.

11. Add to the gothambu payasam. Give them a mix.

12. Nurukku Gothambu Payasam/Broken Wheat Payasam/Gothumai Payasam recipe is ready.

PICTORIAL INSTRUCTIONS

1. To begin making the Nurukku Gothambu Payasam/Broken Wheat Payasam/Gothumai Payasam recipe - keep all the ingredients ready.

5. To Cook Jaggery Water - Heat 1/2 cup of water and add jaggery powder and just melt to extract jaggery water. Once the jaggery is melted, turn off the flame and strain the jaggery water.

8. Now add thick coconut milk, cardamom powder, dry ginger powder, roasted cumin powder and salt.
