How to make Murungai Keerai Sambar?/How to make Drumstick Leaves Sambar?

Murungai Keerai Sambar/Drumstick Leaves Sambar is an easy, tasty and nutritious south Indian sambar recipe. You can easily make this Murungai Keerai Sambar within 30 minutes and serve it as an accompaniment to rice or chapati.

INGREDIENTS

Toor Dal - 1 cup
Murungai Keerai/Drumstick Leaves - 1 cup (tightly packed)
Small Onions - 15
Nattu Thakkali/Country Tomato - 2
Green Chilli - 2
Garlic - 3
Salt - to taste
Sambar Masala Powder - 1 tablespoon
Turmeric Powder - 1/2 teaspoon
Water - as needed

For Tempering

Ghee - 1 tablespoon
Coconut Oil - 1 tablespoon + 1 teaspoon
Mustard Seeds - 1/2 teaspoon
Fenugreek Seeds - 1/4 teaspoon
Jeera/Cumin Seeds - 1/2 teaspoon
Dry Red Chilli - 2 (halved)
Asafoetida - 1/2 teaspoon

INSTRUCTIONS

1. To begin making the Murungai Keerai Sambar/Drumstick Leaves Sambar Recipe - First, wash the toor dal and drumstick leaves separately in 3-4 exchanges of water. Wash, chop and grind the tomato into a paste. Keep all the ingredients ready.

2. To Pressure Cook - In a pressure cooker, add washed toor dal, turmeric powder, garlic, 2 cups of water and 1 teaspoon oil and pressure cook for 4-5 whistles.

3. Turn off the flame and keep it aside.

4. To Cook Drumstick Leaves - Heat ghee in deep kadai and add drumstick leaves and fry for 1-2 minutes. Turn off the flame and remove the drumstick leaves into a plate.

5. Again heat a kadai over a medium flame and add 1 tablespoon of coconut oil and mustard seeds let them splutter add fenugreek seeds, cumin seeds, asafoetida and red chilli fry for a few seconds and then add small onions and saute for 1-2 minutes, add green chilli give them a mix.

6. Now add tomato paste and saute for a minute and then add sambar masala powder and salt.

7. Saute for a minute and then add toor dal with boiled water mix well and adjust the level of water and salt.

8. Close with the lid and cook for 5 minutes over a low flame.

9. Finally add drumstick leaves and cook for a minute.

10. Turn off the flame immediately.
