What is Poriyal?

Poriyal is a traditional south Indian vegetarian dish, especially from Tamilnadu. Poriyal is a Tamil word used for stir-fried or sauteed vegetables or leafy greens. This poriyal dish is called Thoran in Kerala, Palya in Kannada and Veppudu in Andhra Pradesh.

Poriyal is a dry vegetable or leafy green preparation seasoned with spices like mustard seeds, urad dal, red chilli or green chilli, curry leaves and asafoetida and is also flavoured with generous amounts of freshly grated coconut. It is typically served as an accompaniment to lunch meals. Poriyal are also a part of Tamil vegetarian vallai ilai sappadu (Tamil Thali).

Poriyal is always named after the vegetables or leafy greens used in the recipe. For example - I've already shared two poriyal recipes - Arai Keerai Poriyal and Murungai Keerai Poriyal. Muttaikose Poriyal Recipe is one of the popular poriyal recipes typically made as an accompaniment to rice or chapati. It is an easy dish that can be made within 30 minutes. In most Tamilnadu vegetarian wedding meals, Cabbage Poriyal Recipe are also a part of Vallai Ilai Sappadu/Wedding Meals.

Kalyana Vettu Muttaikose Poriyal Recipe/Marriage Style Cabbage Stir Fry Recipe is prepared with Cabbage/Muttaikose as the main ingredient and seasoned with oil, mustard seeds, urad dal, cumin seeds, onion, green chilli, curry leaves and asafoetida. How to make Kalyana Vettu Muttaikose Poriyal Recipe?/How to make Marriage Style Cabbage poriyal Recipe?

INGREDIENTS

Cabbage/Muttaikose (chopped) - 3 cups
Yellow Moong Dal/Pasi Paruppu - 1/2 cup
Onion - 1
Freshly Grated Coconut - 1/2 cup
Green Chilli - 2
Salt - to taste

FOR TEMPERING

Oil - 1 tablespoon
Mustard Seeds - 1/4 teaspoon
Broken Urad Dal - 1/4 teaspoon
Cumin/Jeera - 1/4 teaspoon
Curry Leaves - 1 sprig
Asafoetida - 1 pinch

INSTRUCTIONS

1. To begin making the Kalyana Vettu Muttaikose Poriyal Recipe - rough chop the onion and green chilli and keep all other ingredients ready.

2. To Dry Roast - Heat a pan over a medium flame, add yellow moong dal and dry roast for a minute. Turn off the flame. Allow to cool completely and wash them in 2-3 exchanges of water.

3. To Boil - Heat a pan over a medium flame, add washed moong dal, add 1 1/2 cups of water, and cook for 5-7 minutes or until soft. Do not mash or overcook the moong dal.

4. Turn off the flame and strain the water completely. Keep it aside.

5. To make poriyal - While cooking moong dal, simultaneously heat oil in a pan over a medium flame add mustard seeds allow to splutter, and add urad dal, cumin seeds, asafoetida, onion and green chilli for 1 minute.

6. Now add chopped cabbage and saute for 1 minute, add salt and give them a mix.

7. Add 1/2 cup of water and allow to cook cabbage for 3-5 minutes.

8. Don't forget to mix in between cooking.

9. Once the cabbage is softly cooked and the water evaporates add boiled moong dal and give them a mix.

10. In this stage, check for the salt and adjust accordingly.

11. Turn off the flame.

12. Finally, add grated coconut and curry leaves and mix them all.

13. Muttaikose Poriyal/Cabbage Poriyal/Kalyana Vettu Muttaikose Poriyal Recipe is ready.

You can serve this Kalyana Vettu Muttaikose Poriyal Recipe as a side dish for sambar rice, rasam rice, curd rice or chapati.
