Kadayal is a traditional south Indian cooking technique used for preparing vegetarian side dishes. Like the cooking technique to boil, stir-fry, shallow fry, and deep fry, kadayal is the traditional method of cooking. It is a popular technique used across Indian cuisines, especially Tamil cuisine.
Kadayal is a Tamil word used for mashing cooked ingredients together. For the kadayal dish, a special clay pot vessel and wooden masher are used. Inside the clay pots, they are either stoned or rough-surfaced. Here below, I've shared the image of my stoned clay pot and wooden masher.

Pachai Payaru Kadayal Recipe is a very popular south Indian Side dish recipe that hailed from the Kongunadu cuisine of Tamilnadu. It is typically prepared as an accompaniment to the rice and ghee combination.
Pachai Payaru Kadayal Recipe is prepared with green mung beans/pachai payaru/sabut moong as the main ingredient and flavoured with vegetables like small onions, garlic, green chilli, country tomato and spices like cumin seeds, coriander seeds, salt and tamarind. Pachai Payaru Kadayal Recipe is also tempered with oil, mustard seeds and curry leaves.

How to make Pachai Payaru Kadayal Recipe?/How to make Green Gram Curry Recipe?
Pachai Payaru Kadayal Recipe/Green Gram Curry Recipe is a creamy, tasty and nutritious side dish recipe. You can easily make this recipe within 45 minutes and serve it as an accompaniment to rice or chapati.

INGREDIENTS
Pachai Payaru/Green Mung Bean/Sabut Moong Dal - 1/2 cup
Castor Oil - 1 teaspoon
Small Onion - 10
Garlic - 6
Green Chilli - 3
Dry Red Chilli - 1
Country Tomato/Nattu Thakkali - 1
SPICES
Cumin Seeds - 1 teaspoon
Coriander Seeds - 1 teaspoon
Tamarind - 1 teaspoon
Turmeric - 1/2 teaspoon
FOR TEMPERING
Coconut Oil - 2 tablespoons
Mustard Seeds - 1 teaspoon
Curry Leaves - 1 sprig
Ghee - 1 tablespoon
INSTRUCTIONS
1. To begin making the Pachai Payaru Kadayal Recipe/Green Gram Curry Recipe - First, heat a pan add pachai payaru and dry roast for 2-3 minutes over a medium flame. Turn Off the flame. Wash in 2-3 exchanges of water and soak for 30 minutes in water.
2. Meanwhile, wash and chop the onions, tomato, garlic and green chilli.
3. To Pressure Cook - Heat a pressure cooker and add soaked pachai payaru with 2 cups of water, turmeric and castor oil and cook for 2 whistles.
4. Turn off the flame.
5. Open the cooker and transfer the cooked pachai payaru to the bowl.
6. Heat a pressure cooker with 1 tablespoon of coconut oil add cumin seeds, coriander seeds, chopped onion, garlic, chilli and tomato and saute for a few seconds.
7. Now add the boiled pachai payaru along with water, salt and tamarind and cook for 1 whistle.
8. Turn off the flame. Open the pressure cooker and transfer it to a clay pot vessel.
9. Now using the wooden masher, mash all the ingredients together.
10. If you do not have a wooden masher and clay pot. Please use a potato masher to mash all the ingredients together.
11. To Temper - Heat remaining oil in a pan add mustard seeds allow to splutter and then add curry leaves. Turn off the flame.
12. Add to pachai payaru kadayal with a tablespoon of ghee. Give them a mix.
13. Pachai Payaru Kadayal Recipe/Green Gram Curry Recipe is ready.
