INGREDIENTS

Soya Chunks/Meal Maker - 1 cup
Potato (chopped) - 1
Onion (chopped) - 1 large
Tomato (chopped) - 1 medium
Ginger and Garlic Paste - 1 tablespoon
Curd - 2 tablespoons

SPICES

Salt - to taste
Red Chilli Powder - 1 teaspoon
Coriander Powder - 1 teaspoon
Turmeric Powder - 1/2 teaspoon
Garam Masala - 1/4 teaspoon
Pepper Powder - 1 tablespoon

TEMPERING

Oil - 1 tablespoon
Ghee - 1 teaspoon
Fennel Seeds - 1 teaspoon
Dry Red Chilli (halved) - 1
Curry leaves - 1 sprig
Coriander leaves - for garnish

INSTRUCTIONS

1. To begin making the Soya Chunks Pepper Masala Recipe/Meal Maker Pepper Masala Recipe - First wash the soya chunks in 2-3 exchanges of water and keep all the ingredients ready.

2. To Cook Soya Chunks - Heat a large pan with 3-4 cups of water and some salt and allow to boil. Drop the washed soya chunks into the boiling water and keep the flame over a moderate flame and cook for 5-7 minutes or until soft.

3. Turn off the flame and strain the water from the soya chunks and rinse in cold water.

4. Squeeze the excess water from the soya chunks and keep it aside.

5. Heat water in a pan with some salt and cook the chopped potato until half cooked. Drain the water and keep it aside.

6. To Cook - Heat oil in a kadai over a moderate flame and add fennel seeds, dry red chilli and curry leaves and fry for a few seconds. And then add finely chopped onions and saute until translucent.

7. Now add ginger and garlic paste and saute for a few seconds and add chopped tomato and give them a mix.

8. Add turmeric, coriander powder, red chilli powder and salt and saute for a few seconds and 1/2 cup of water and cook until oil oozes out from the side.

9. Now add curd and saute for 1 minute.

10. Add soya chunks and potato give them a mix and add 1/2 cup of water and allow to cook for 5 minutes over a medium flame.

11. Once the water dries up and masala comes together add pepper powder and garam masala.

12. Mix them all.

13. Check for the salt and spice levels and adjust accordingly.

14. Turn off the flame.

15. Finally add coriander leaves and a spoon of ghee mix well.
