What is Sunnundalu?
Sunnundalu is a popular and traditional south Indian sweet dish that hailed from the cuisine of Andhra Pradesh. It is a classic recipe prepared during festivals like Pongal, Diwali, Ugadi and many more special occasions.
Sunnundalu recipe is a simple recipe prepared with black gram/urad dal as the main ingredient and sweetened with sugar or jaggery. Sunnundalu recipe also includes ghee as the binding ingredient.
Sunnundalu is a delectable sweet ball with a unique aroma and crunchy texture. There are many variations to preparing this recipe. I've shared my favourite version of the sunnundalu recipe in this post.
Traditionally, these sweet balls are made with whole black gram with skin and sweetened with jaggery. However, in this post, I've shared my favourite version of the sunnundalu recipe made with whole urad dal without skin and sugar.

How to make Sunnundalu Recipe?/How to make Sunnundalu With Sugar Recipe?/How to make Urad Dal Ladoo Recipe?
Sunnundalu Recipe/Sunnundalu With Sugar Recipe/Urad Dal Ladoo Recipe is a tasty, toothsome and traditional south Indian Sweet dish. It is a beginner-friendly ladoo recipe you can easily make this Sunnundalu/Urad Dal Ladoo Recipe within 30 minutes and serve it as a snack recipe, dessert recipe or as Prasadam recipe.

Serving - 16 to 18 Ladoo
Timing - 30 minutes
INGREDIENTS
Whole Black Gram Without Skin/White Urad Dal/Vellai Ulundhu - 1 cup
Raw Rice/Pachai Arisi - 1 tablespoon
Sugar - 3/4 cup
Ghee - 4 to 5 tablespoons
Cardamom - 3 (seeds only)
INSTRUCTIONS
1. To begin making the Sunnundalu Recipe/Sunnundalu With Sugar Recipe/Urad Dal Ladoo Recipe - Clean and wash the white urad dal and rice in 2-3 exchanges of water individually.
2. To Dry - On a kitchen countertop, place the thick cotton cloth and transfer the white urad dal and air dry for 10 minutes.
3. Meanwhile, in a dry mixer grinder add sugar and cardamom seeds and grind to a smooth powder.
4. Transfer to a bowl and keep it aside.
5. To Dry-Roast - Heat a deep and heavy bottom kadai over a low flame, add urad dal and dry roast for 5 minutes.
(Note - If you find it difficult to roast urad dal at once. Do it in batches.)
6. Now add rice and continue roasting. The key to getting perfect and even roasted urad dal is continuous stirring. Do not forget or rest in between roasting.
7. Keep roasting until it turns caramel brown.
8. Turn off the flame and transfer to a wide plate.
9. Allow them to cool completely.
10. To Grind - In a dry mixer add roasted urad dal and grind it to a coarse to fine powder.
11. Transfer to a wide plate.
12. Now mix urad dal flour and powdered sugar evenly.
13. Heat a pan add ghee and get it to a pipping hot.
14. Now add 3/4th of ghee to a flour mixture and mix.
15. Once all the ingredients are mixed well it is easier to make balls. If it is dry add the remaining ghee and mix well.
16. Divide the mixture into even-sized balls.
17. Sunnundalu Recipe/Sunnundalu With Sugar Recipe/Urad Dal Ladoo Recipe is ready.
