Indian festivals are incomplete without Indian Sweets. Northern parts of Indians celebrate festivals with milk sweets, halwa, burfi and peda. Southern parts of Indian celebrate festivals with ghee sweets, payasam, kesari and adhirasam. Across the Indian subcontinent, the most common sweet prepared during the festivals are ladoo.

Ladoos are individual portions of sweet balls made from the flour of various ingredients like Rice Flour, Wheat Flour, Millet Flour, Moong Dal, Chana Dal, Urad Dal, Semolina and many more.

Ladoos are easy to prepare and great for gifting to family and friends during festivals and also add colour to festive sweet platters. In this post, I'm sharing one of my favourite ladoo recipes - "Besan Ladoo Recipe".

What is Besan Ladoo Recipe/Besan Ke Laddu Recipe?

Besan Ladoo is a classic Indian festive sweet popularly made throughout the northern parts of India. It is a traditional sweet recipe typically made during festivals like Weddings, Diwali, Holi, Krishna Jayanthi or any special occasion.

Besan Ladoo is an extremely delicious melt-in-the-mouth recipe. Traditionally made with only 3 ingredients - Besan, Ghee and Bura (Boora) Sugar or Tagar Sugar.

Besan Ladoo Ingredients

As I previously mentioned, besan ladoos are traditionally made with 3 ingredients.

1. Besan

Besan is nothing but flour made from split bengal gram dal (chana dal). Besan is a Hindi term used for Gram Flour in English, Kadalai Maavu in Tamil and Senaga Pindi in Telugu.

2. Ghee

Ghee is the main ingredient in besan ladoo. It adds a taste and aroma to besan ladoo.

3. Bura (Boora) Sugar or Tagar Sugar

Bura sugar or Tagar sugar is traditionally used as a sweetener in besan ladoo.

What is Bura Sugar/Boora Sugar/Tagar Sugar?

Bura or Boora sugar also known as Tagar sugar. It is a special form of sugar which is made by melting white sugar with water to get to a condition of crystallization. Bura sugar has a very unique sweet taste and is widely used in Indian Sweet Dishes, especially Ladoo and Peda.

Preparing Bura Sugar/Tagar Sugar at home is really simple. It can be made in under 10-15 minutes. In this recipe, I used homemade Bura Sugar.

Tips to make perfect Besan Ladoo

1. Use homemade ghee or any good quality ghee.

2. Use good quality and recently purchased besan flour.

3. If you use old or expired besan flour, your besan ladoo will taste bitter.

4. You can replace bura sugar with regular powdered white sugar.

Other than besan, ghee and sugar. Besan ladoo can be flavoured with nuts and spices. I like cardamom flavour and cashew nuts in my besan ladoo. So I used them in this recipe. You can use your favourite nuts and spices in your besan ladoo recipe.

How to make Besan Ladoo?/How to Besan laddu with bura sugar?

Besan Ladoo is an extremely delicious melt-in-the-mouth recipe. You can easily prepare this recipe within 30 minutes and serve it as a snack or dessert recipe.

Cuisine - North Indian
Serving - 8 to 10 Ladoos
Timing - 30 minutes

INGREDIENTS

Besan Flour/Gram Flour/Kadalai Maavu - 1 cup
Ghee - 1/4 cup + 1 teaspoon
Bura Sugar Or Powdered White Sugar - 1/2 cup
Cardamom Powder - 1 teaspoon
Cashew Nuts (chopped) - 1/4 cup

INSTRUCTIONS

1. To begin making the Besan Ladoo Recipe - Keep all the ingredients ready.

2. To Cook - Heat a heavy bottom kadai over the lowest flame and add ghee and besan flour. Start to stir continuously.

3. Within a few seconds of stirring, you may see small clumps of besan flour. Just ignore them and keep stirring.

4. After 5 minutes of stirring, the colour of the besan flour begins to change and a slight aroma appears.

5. Keep stirring to incorporate the ghee into the flour.

6. After 10-12 minutes, the besan flour will absorb all the ghee and become lumpy.

7. Keep the flame at the lowest and keep stirring for another 10-12 minutes.

8. Besan will form into a dough and then loosen up and after around 10 minutes, it will turn into a smooth paste-like consistency.

9. After 20-25 minutes of continuous stirring, ghee oozes out from the mixture and the colour changes to golden. You also get an aromatic smell. Turn off the flame.

10. To check the doneness of the mixture, taste test or sprinkle a few drops of water. If it gets sizzled, it is cooked.

11. Transfer the mixture to a dry bowl and allow it to cool for 2-3 minutes.

12. Now add cardamom powder and bura sugar or powdered sugar and mix well using a spatula.

13. Heat 1 teaspoon of ghee in a pan and add cashew nuts and fry for a few seconds or until golden. Turn off the flame and add to the besan ladoo mixture.

14. Mix all the ingredients very well.

15. When the heat is tolerable, shape all the ladoos immediately.

To Store

You can store this besan ladoo in an airtight container for 2 weeks in a cool dry place. While taking Ladoos from the container, use dry hands or a dry spoon and close the container immediately. You can also store them in the refrigerator.
