What is Kheer?
Kheer is a classic, extremely delicious, creamy and thick sweet pudding which is made up of rice, milk, and sugar. It is also flavoured with spices, nuts and edible essences. Kheer (Rice Pudding) is a popular North Indian sweet dish.
The term "Kheer" may drive from the Sanskrit word "Ksheer" which means "Milk". Milk is slow-cooked with rice until the rice is almost mushy and sweetened with sugar and flavoured with spices, nuts and edible essences. The continuous process of stirring and slow cooking the milk, rice and sugar is called Kheer.
Kheer is a perfect dessert recipe for all occasions. Rice Kheer is often eaten during Summer and Festivals like Ramzan, Diwali or any special occasion.
Kheer Recipe Ingredients | Rice Kheer Recipe Ingredients
As I previously mentioned, the kheer recipe is made with rice, milk, sugar, spices, nuts and edible essence. However, the traditional kheer recipe is made with 3 main ingredients rice, milk and sugar. All the other ingredients are added as additional flavours and garnish. For the perfect kheer recipe, please follow the below tips -
1. Milk -
For creamy and tasty kheer recipes, always use whole milk/full fat milk/full cream milk.
2. Sugar -
Sugar is commonly used to make kheer recipes. However, you can alternatively use jaggery.
3. Best rice to make kheer -
In India, basmati rice is widely used to make kheer recipes.
However, for creamy and thick kheer, you need whole milk and high starch content rice. Basmati rice is low in starch content and is not the best rice to make the kheer recipe. In case, if you use basmati rice, you get a less creamy and thin kheer recipe.
For extremely delicious, creamy and thick kheer, always use high starch content rice.
High starch content is easily available in short-grain rice varieties. To name a few rice varieties - Tamilnadu Seeraga Samba (Jeera Samba), Kerela Jeerakasala, Maharashtra Ambemohar, Maharashtra Indrayani or Odisha Patni. You can use any one of these rice.
So, the best rice to make the kheer recipe is high starch content short grain rice.
In my kheer recipe, I used seeraga samba rice/jeera samba rice, which is grown locally in Tamilnadu. You can use any short-grain rice which is grown locally at your place.
Spices
Saffron and cardamom powder are the most commonly used spices in kheer.
Nuts
You can use almonds, cashew nuts, walnuts, melon seeds, cuddapah almonds or pistachios. I like to add almonds to my kheer.
Edible Essence
You can use Rose essence or kewra essence.

Kheer Recipe | Seeraga Samba Rice Kheer Recipe is a classic, extremely delicious, creamy, and thick sweet pudding recipe. It is one of the popular North Indian Dessert recipes. You can easily make this kheer recipe within 40 to 50 minutes and serve it as a dessert or snack.

INGREDIENTS
Seeraga Samba Rice - 1/4 cup
Whole Milk/Full-Cream Milk/Full Fat Milk - 1 litre
Sugar - 1/2 cup
Water - 1 cup
Saffron - 1/2 teaspoon
Cardamom Powder - 1/2 teaspoon
Rose Essence - 2 drops
Almond (Sliced) - 5
Salt - 1 pinch
INSTRUCTIONS
1. To begin making the Kheer Recipe/Seeraga Samba Rice Kheer Recipe - Keep all the ingredients ready.
2. Take seeraga samba rice in a bowl, wash in 3-4 exchanges of water, and soak in a cup of water for 30 minutes.
3. To Boil - Heat a heavy bottom pan over a low flame, add 1 litre of milk and allow to boil for 2-3 minutes.
4. To Soak Saffron - Take a spoonful of boiling milk in a small bowl, add saffron and 1/4 teaspoon of sugar, and soak.
5. Now drain the soaked rice and add it to boiling milk.
6. Allow the rice to cook for 30-35 minutes or until soft and slightly mushy. You will need to stir often and scrape the sides to avoid burning the milk.
7. To check the doneness of rice - take a few cooked rice and press them between your fingers. If it is easily mashed, it is cooked. If not, keep cooking until done.
8. Now add the soaked saffron and mix well.
9. At this point, the rice should be fully cooked and thickened in consistency.
10. To add sugar - Add sugar and mix well. Once you added sugar, the kheer will loosen up. Cook for 2-3 minutes.
11. Turn off the flame.
12. To Garnish - Now add chopped almond, rose essence and cardamom powder.
13. Mix well.
14. Kheer Recipe/Seeraga Samba Rice Kheer Recipe is ready.
You can serve Kheer Recipe/Seeraga Samba Rice Kheer Recipe hot, warm or cold. If you serve it cold, pour it into individual servings and refrigerate them for a minimum of 2 hours.
