How to make Kalyana Rava Kesari Recipe? | How to make Wedding Style Rava Kesari Recipe? | How to make Rava Kesari Recipe?
Rava Kesari/Kalyana Rava Kesari is an extremely delicious melt in the mouth Indian Sweet Recipe. You can easily make this kesari recipe within 20 minutes and serve it as a breakfast or dessert recipe.

INGREDIENTS
Rava/Semolina/Sooji - 1/2 cup
Water - 1 1/2 Cups
Sugar - 1 Cup
Ghee - 1/4 cup + 1 tablespoon
Groundnut Oil - 1/4 cup
Cashew Nuts - 7
Raisins - 7
Salt - 1 pinch
Red-Orange Edible Food Colour - 1 pinch
Cardamom Powder - 1 teaspoon
INSTRUCTIONS
1. To begin making the Kalyana Rava Kesari Recipe - Keep all the ingredients ready.
2. To Boil - Add water, salt, and food colour in a saucepan and boil over a medium flame.
3. To Make Kalyana Rava Kesari - Heat a pan over a low flame, add a spoon of ghee and fry cashew nuts and raisins. Once it is golden brown, take them out and keep them aside.
4. Now mix oil and ghee together. Keep it aside.
5. In the same pan add 1/2 ghee and oil mixture and add rava.
6. Fry the rava for 1 minute.
7. Now add the remaining ghee and oil mixture and roast for 2 minutes. Roast until the colour of the rava slightly changes and a nice aroma appears.
8. Now carefully add boiling water to the roasted rava.
9. Make sure to keep the flame low while adding the boiling water to the rava.
10. Stir well continuously and ensure no lumps are formed.
11. Once the rava starts absorbing water, cover the pan and cook on a low flame for a few seconds.
12. Open the lid and cook until the water is completely dry and non-sticky. Add fried cashew nuts and raisins.
13. The rava should be cooked well or else the kesari will not turn out well.
14. Once it is cooked well and the water gets absorbed, check for the doneness of the rava.
15. To check the doneness of the rava - either taste test or take a small amount of cooked rava and press in between the fingers. You feel soft and easily mash in between your fingers if it is cooked.
16. Now add the sugar and mix well.
17. After adding sugar, it starts to melt and the kesari will be runny.
18. Stir well for a few seconds. Once the kesari starts to thicken, add cardamom powder and 1 tablespoon of ghee and mix well.
19. Turn off the flame immediately.
20. Do not overcook the kesari.
21. At this point, kesari should be pouring in consistency. So that kesari once cools down, you get the correct consistency.
