Pudalangai Poriyal | Snake Gourd Poriyal is a popular stir fry recipe from the southern parts of India, especially Tamilnadu and Kerala. Pudalangai Poriyal is an easy and quick stir-fry recipe.

This healthy and comforting side dish perfectly accompanies any south Indian lunch meal. In fact, Pudalangai Poriyal is a part of typical Tamil Vallai Illai Saapadu (Tamil Vegetarian Lunch Meals).

Ingredients required to make pudalangai poriyal are fresh and young pudalangai (snake gourd), boiled chana dal, freshly grated coconut, oil and spices like mustard seeds, asafoetida, cumin seeds, chillies, curry leaves, turmeric and salt.

The below steps guide you to select, clean and chop snake gourd -

How to select Pudalangai (Snake Gourd)

1. Always choose fresh and young pudalangai. They are soft to cook and mildly sweeter to taste.

2. Never buy a well-matured snake gourd. They are harder to cook and bitter to taste.

How to clean Pudalangai (Snake Gourd)

1. Wash the pudalangai in 1-2 exchanges of water.

2. Now using the knife scrape off the whitish layer of snake gourd/pudalangai.

3. Gently rub and wash them in 3-4 exchanges of water.

How to chop Pudalangai (Snake Gourd)

1. First, trim both edges of the snake gourd.

2. Cut them into portions.

3. Further, cut them lengthwise.

4. Remove the inner whitish layer along with the pith and seeds.

5. Now chop the snake gourd into desired shapes or according to the recipe.

Pudalangai Poriyal | Snake Gourd Poriyal is a simple, tasty and healthy stir fry recipe. You can easily make this within 30 minutes and serve it as an accompaniment to any south Indian lunch meal.

Serving - 2-3
Timing - 30 minutes

INGREDIENTS

Snake Gourd/Pudalangai - 250 gms
Chana Dal/Kadalai Paruppu - 2 tablespoons
Turmeric Powder - 1/4 teaspoon
Salt - to taste
Grated Coconut - 2 tablespoons

FOR TEMPERING

Oil - 1 tablespoon
Mustard Seeds - 1/4 teaspoon
Urad Dal - 1/4 teaspoon
Cumin Seeds - 1/2 teaspoon
Green Chilli - 1
Asafoetida - 1 pinch
Curry Leaves - 1 sprig

INSTRUCTIONS

1. To begin making the Pudalangai Poriyal/Snake Gourd Stir Fry - Keep all the ingredients ready.

2. To Soak - Wash the chana dal in 2-3 exchanges of water and soak them in a cup of hot water for 5 minutes.

3. To Pressure cook - Transfer the soaked chana dal into the pressure cooker with turmeric powder and water.

4. Pressure cook for 5-6 whistles or until softly cooked.

5. To Chop Pudalangai/snake gourd - Wash the pudalangai in 1-2 exchanges of water.

6. Now using the knife scrape off the whitish layer of snake gourd/pudalangai.

7. Gently rub and wash them in 3-4 exchanges of water.

8. Now chop them lengthwise into 2 pieces.

9. Remove the whitish layer, piths and seeds from the snake gourd.

10. Now evenly chop them into your desired shape.

11. To Cook - Heat oil in a pan and add mustard seeds, urad dal and cumin seeds.

12. Allow them to splutter.

13. Now add chopped snake gourd and curry leaves.

14. Keep the flame on high heat.

15. Stir the snake gourd.

16. Add some salt and cook for 4-5 minutes.

17. Once cooked, add boiled chana dal and mix well.

18. Now check for the salt and adjust accordingly.

19. Finally add grated coconut and give them a mix.

20. Pudalangai Poriyal/Snake Gourd Stir Fry is ready.

You can serve this Pudalangai Poriyal/Snake Gourd Stir Fry as an accompaniment to any south Indian lunch meal or even chapati. I would like to eat this with rasam rice, vatha kuzhambu or sometimes with chapati.
