Carrot Puttu is a simple and unique south Indian stir-fry recipe that tastes similar to non-vegetarian stir-fry dishes. Carrot Puttu is made with carrot, onion, grated coconut, roasted chana dal (pottukadalai), and green chilli, and is spiced with cloves, cinnamon, and turmeric powder. This is a quick and simple side dish recipe. It can be served as an accompaniment to any Indian lunch.

Carrot Puttu, as previously stated, is a unique stir fry. The texture of this recipe is very important, making it a one-of-a-kind stir fry recipe. Carrot puttu texture should be soft, dry and similar to a puttu in a south Indian dish.

Carrot Puttu is my family's favourite stir-fry recipe. I make atleast 2-3 times a month. Carrot Puttu pairs very well with south Indian sambar rice, rasam rice, kara kuzhambu, mutton curry, chicken curry and chapati.

How to make Carrot Puttu?

INGREDIENTS

Carrot - 6 medium size
Onion - 2 medium size
Green Chilli - 4
Ginger Garlic Paste - 1 teaspoon
Coconut (Grated) - 1/4 cup
Roasted Chana Dal/Pottukadalai - 2 tablespoons
Oil - 2 tablespoons
Turmeric Powder - 1/4 teaspoon
Cinnamon - 1
Cloves - 2
Salt - to taste
Coriander Leaves - 1 tablespoon

INSTRUCTIONS

1. To begin making the Carrot Puttu Recipe - Keep all the ingredients ready.

2. To Chop - Finely chop the onions and green chillies. Wash, peel and grate the carrot. Keep them aside.

3. To Grind - In a mixer grinder, add grated coconut and roasted chana dal (pottukadalai) and grind them to a coarse powder. Keep them aside.

4. To Cook - Heat a kadai over a high flame, add grated carrot, turmeric powder and salt and fry for 1-2 minutes.

5. Transfer to a plate.

6. In the same kadai, add oil, cinnamon and cloves. Fry for a few seconds.

7. Add chopped onions and green chilli. Fry for a few seconds.

8. Now add ginger garlic paste and fry for a few seconds.

9. Add carrot and cook for 2-3 minutes or until softly cooked.

10. Now add the coarsely ground coconut and pottukadalai powder.

11. Mix well and cook for 1 minute.

12. Finally, check for the salt and adjust accordingly.

13. Turn off the flame. Add coriander leaves and mix well.
