How to make Kollu Poondu Idli Podi?

Kollu Poondu Idli Podi | Horse gram Chutney Powder is a simple, tasty, flavourful south Indian chutney powder. You can easily prepare this Kollu Idli Podi within an hour and serve it as an accompaniment to any breakfast or tiffin items.

Cuisine - South Indian
Serving - 2 cups
Timing - 1 hour

INGREDIENTS

Kollu/Horse Gram - 1 cup
Black Gram/Urad Dal/Karuppu Ulundhu (Whole) - 1/2 cup
Dry Red Chillies - 30 nos
Curry Leaves - 1/2 cup
Asafoetida Powder - 1 full teaspoon
Garlic - 15 cloves
Salt - to taste

INSTRUCTIONS

1. To begin making the Kollu Poondu Idli Podi recipe - Keep all the ingredients ready.

2. To Clean - Manually, clean the kollu and black urad dal individually by removing any dust and debris.

3. To Wash - Individually, wash the kollu, black urad dal and curry leaves in 3-4 exchanges of water.

4. Drain the water completely from them.

5. To Dry Roast - Heat a heavy bottom kadai over a moderate flame, add kollu and continuously dry roast for 5-7 minutes or until it starts to pop and colour changes.

6. Transfer to a wide plate.

7. Now add black urad dal and dry roast for 4-5 minutes or until a nice aroma appears and the colour changes.

8. Transfer to a plate.

9. Now add the curry leaves and fry until crisp and dry. Transfer to a plate.

10. Add the dry red chillies and fry for 1-2 minutes or until crisp. Transfer to a plate.

11. In the same kadai, add the garlic and dry roast for 3-4 minutes or until golden.

12. Transfer to a separate plate.

13. Turn off the flame and add salt and asafoetida powder and fry for a few seconds. Transfer to a plate.

14. Allow all the ingredients to cool for 10-15 minutes.

15. To Grind - In a mixer grinder, add all the dry roasted ingredients except garlic and grind to a coarse powder.

16. Finally, add the roasted garlic and pulse grind for a few seconds.

17. Now transfer the chutney powder to a wide plate and allow it to cool for 10-15 minutes.

8. Transfer to a plate.

9. Now add the curry leaves and fry until crisp and dry. Transfer to a plate.

10. Add the dry red chillies and fry for 1-2 minutes or until crisp. Transfer to a plate.

11. In the same kadai, add the garlic and dry roast for 3-4 minutes or until golden.

12. Transfer to a separate plate.

13. Turn off the flame and add salt and asafoetida powder and fry for a few seconds. Transfer to a plate.

15. To Grind - In a mixer grinder, add all the dry roasted ingredients except garlic and grind to a coarse powder.
