How to make Pudina Chutney With Coconut Recipe?
Pudina Chutney | Mint Chutney is a simple, nutritious and flavourful south Indian chutney recipe. You can easily prepare this within 20 minutes and serve it as an accompaniment to any south Indian breakfast items/tiffin items.

INGREDIENTS
Mint Leaves/Pudina - 1 bunch or 1cup (tightly measured)
Coconut - 1/4 or 1 cup (grated)
Red Chilli - 6 to 8
Tamarind - gooseberry size
Salt - to taste
Mustard Seeds - 1 teaspoon
Urad Dal - 1 teaspoon
Asafoetida - 1/4 teaspoon
Sesame Oil - 1 tablespoon
Water - 1 cup
INSTRUCTIONS
1. To begin making the pudina chutney/mint chutney recipe - Keep all the ingredients ready.
2. Pluck the green mint leaves from the stalks, soak them in salted water for 5 minutes, and then wash them in 2-3 exchanges of water.
3. Drain the water completely and keep it aside.
4. To Grind - In a mixer grinder, add chopped coconut and coarsely grind it.
5. To Fry - Heat 1/2 teaspoon of oil in a pan, add dry red chillies and fry for a few seconds, add tamarind and saute once.
6. Transfer to a plate.
7. Add 1/2 teaspoon oil and mint leaves in the same pan.
8. Quickly saute for a few seconds and transfer to a plate.
9. In the same pan, heat the remaining oil and mustard seeds and allow them to splutter, add urad dal and fry until golden.
10. Turn off the flame and add asafoetida. Mix once.
11. To Grind the Pudina Chutney - Add grated coconut, red chilli, tamarind, and mint leaves in a mixer grinder.
12. Grind them to a smooth paste by gradually adding 1/2 to 1 cup of water.
13. Finally, add the mustard seeds, urad dal and asafoetida.
14. Grind them for a few seconds.
15. Transfer the chutney to a serving bowl.
