About - Aloo Palak Recipe | Potato and Spinach Curry Recipe

Aloo is a Hindi term which means potato and Palak again is a Hindi term which means spinach in English and pasalai keerai in Tamil. Aloo palak means potatoes cooked with spinach. It is one of the popular Indian side dishes. Typically, made as an accompaniment to Indian flatbreads such as chapati, roti, poori, naan and so on. It even tastes best with rice and dal.

Aloo Palak is a simple and flavourful Indian side dish. It is popularly made during Indian Winters. In India, during the winter season, we get plenty of fresh greens and fresh root vegetables in the market. Palak and potato are ubiquitous vegetables during winter. In fact, Aloo Palak is a constant and favourite recipe in most Indian homes during winter seasons.

It is one of my family's favourite side dishes. We would like to eat this with chapati or rice and sambar. Whenever palak leaves are available, we never miss this aloo palak recipe.

How to make Aloo Palak? | How to make Potato and Spinach Curry?

Aloo Palak | Potato and Spinach Curry is a simple, tasty and flavourful Indian side dish. You can easily prepare this within 30 minutes and serve it as an accompaniment to any Indian flatbread or even for rice.

INGREDIENTS

Spinach/Palak Leaves - 1 bunch
Potato - 3
Onion - 1
Tomato - 1
Green Chilli - 1
Garlic - 5
Ginger - 1 teaspoon

SPICE POWDERS

Turmeric - 1/4 teaspoon
Red Chilli Powder - 1 teaspoon
Coriander Powder - 1/2 teaspoon
Salt - to taste

TEMPERING

Oil - 2-3 tablespoons
Cumin Seeds/Jeera - 1/2 teaspoon
Dry Red Chilli (halved) - 1
Asafoetida/Hing - 1 pinch

INSTRUCTIONS

1. To begin making the Aloo Palak Recipe - Keep all the ingredients ready.

2. To Prep - Wash the potato and peel the skin and chop them into chunks. Wash and chop the tomato, onion, garlic, green chilli and crush the ginger.

3. Chop the thick stems from palak leaves and wash them in 2-3 exchanges of water.

4. Drain the water completely and chop the palak leaves.

5. To Cook - Heat oil in a kadai, add cumin seeds, dry red chilli and asafoetida and fry for a few seconds.

6. Add onions and fry for a few seconds and then add garlic and green chilli and saute for a minute.

7. Now add potatoes and saute for 1-2 minutes.

8. Add tomato and crushed ginger and saute for 1 minute.

9. Now add turmeric, chilli powder, coriander powder and salt.

10. Keep sauteing for a minute and then reduce the flame to low heat.

11. Cover the kadai with a lid and cook for 2 minutes.

12. Open the lid and give them a mix.

13. Repeat the above steps (11-12) until the potatoes are cooked well.

14. Bring the flame over medium heat.

15. And finally, add the chopped palak leaves and cook for 1-2 minutes.

16. Once the palak leaves are cooked well and the oil oozes on the sides. Turn off the flame.

17. Aloo Palak | Potato and Spinach Curry is ready.

You can serve the Aloo Palak | Potato and Spinach Curry with chapati, roti, puri, paratha, naan, rice and dal and so on. You can also pack this recipe as a side dish for a lunch box.

Tips to make a perfect Aloo Palak

1. Always use fresh palak greens. While cleaning, remove any yellow leaves.

2. Adjust the spice and salt levels according to your taste.

3. Oil is the key ingredient in this recipe. So use liberally.

4. We are not adding any water to this recipe, so make sure to cook the potatoes properly on low heat.

5. Before adding palak leaves, make sure the potatoes are cooked well.
