About - Kurkuri Bhindi Recipe

Kurkuri Bhindi is a Hindi Term, which means crispy okra. It is a popular deep-fried Indian snack typically served as a starter at Indian weddings, restaurants and roadside dabbas.

Kurkuri Bhindi is a quick and easy recipe made with freshly chopped bhindi (okra) and flavorful spices such as red chilli powder, turmeric, coriander powder, cumin powder, ginger garlic paste and salt. Corn flour, rice flour and besan flour are added as a base for a crispy texture. Lemon juice for a tangy taste and finally north Indian flavourful spice ajwain seeds are added as a secret ingredient to elevate the overall taste and aroma of the dish.

How to make Kurkuri Bhindi? | How to make crispy okra fry?

Kurkuri Bhindi | Okra Fry is a simple, tasty and incredibly crispy Indian deep-fried recipe. You can easily cook this kurkuri bhindi dish in 30 minutes and serve it as a complement to any lunch meal.

INGREDIENTS

Bhindi/Okra/Ladies finger - 250 gms
Corn Flour - 3 tablespoons
Besan Flour/Gram Dal Flour - 2 tablespoons
Rice Flour - 2 teaspoon
Lemon Juice - 1
Ginger Garlic Paste - 1 teaspoon
Oil - for frying
Water - if needed

SPICES

Red Chilli Powder - 1 teaspoon
Turmeric - 1/4 teaspoon
Coriander Powder - 1 teaspoon
Cumin Powder - 1/2 teaspoon
Ajwain Seeds - 1/2 teaspoon
Salt - to taste

INSTRUCTIONS

1. To begin making the Kurkuri Bhindi Recipe - Keep all the ingredients ready.

2. To Prep - Wash the bhindi (okra) in 2-3 exchanges of water. Drain the water completely.

3. Using the dry kitchen cloth wipe the water from the bhindi's.

4. Now chop the head and tail of Bhindi and further slice them into your desired shapes preferably thin strips.

5. Remove the seeds completely.

6. Take the chopped bhindi in a deep bowl and add 2 tablespoons of corn flour and mix well.

7. In a separate bowl, add besan, rice flour, chilli powder, coriander powder, cumin powder, ajwain seeds and turmeric powder.

8. Add to the bhindi and mix well.

9. Now add salt, ginger garlic paste and lemon juice.

10. Mix well making sure all the ingredients are well coated.

11. Leave for 2 minutes.

12. Meanwhile, heat oil in a kadai for deep frying.

13. If you feel the bhindi mixture is dry, sprinkle a few drops of water to coat.

14. If it is wet add the remaining corn flour and mix well.

15. To Fry - Keep the flame on a medium heat, add the bhindi uniformly.

16. Wait for a few seconds and then stir occasionally.

17. Fry the bhindi until crisp and golden.

18. Take out and drain off over kitchen paper to remove excess oil.

19. Follow the above steps (15-18) for the remaining bhindi.

20. Kurkuri Bhindi Recipe/Crispy Okra Fry is ready.
