Avarakkai Kootu is a healthy and easy side dish popularly made throughout the southern parts of India. It is a simple recipe made with the green vegetable Avarakkai. Avarakkai is a Tamil name for flat beans, they are also known as broad beans and field beans. In other Indian languages, avarakkai is known as val papdi, valor and sem ki phalli.

Avarakkai Kootu tastes best with rasam, plain rice and ulundhu appalam or kara kulambu (spicy tamarind curry), plain rice with sutta appalam. It even goes very well with chapati. I'd like to eat the kootu recipe with tamarind-based curries such as puli aanam (tamarind curry), karuveppilai kulambu (curry leaves curry) and poondu kulambu (garlic curry).

Avarakkai Kootu is a healthy and easy South Indian side dish. You can quickly prepare this Avarakkai Kootu within 20 minutes and serve it as an accompaniment to any lunch meal.

INGREDIENTS

Avarakkai/Flat Beans - 200 gms
Moong Dal - 100 gms
Turmeric Powder - 1/4 teaspoon
Coconut - 4 pieces
Jeera/Cumin Seeds - 1 teaspoon
Dry Red Chilli - 2
Salt - to taste
Water - as needed

FOR TEMPERING

Oil - 1 teaspoon
Mustard Seeds - 1/2 teaspoon
Urad Dal - 1 teaspoon
Green Chilli - 1

INSTRUCTIONS

1. To begin making the Avarakkai Kootu Recipe - Keep all the ingredients ready.

2. To Chop - Wash the avarakkai in 2-3 exchanges of water.

3. Remove the strings from the sides of the avarakkai and chop them into your desired sizes.

4. To Grind - In a mixer grinder, add coconut, cumin seeds and dry red chilli and grind them into a paste by adding 1/4 cup of water. Keep it aside.

5. To Boil - In a kadai, add chopped avarakkai, salt and enough water to cook.

6. Boil for 4-5 minutes or until well cooked. Keep it aside.

7. Simultaneously, in another kadai, dry roast the moong dal for a few seconds.

8. Wash them in 2-3 exchanges of water.

9. Boil the moong dal with enough water.

10. Once the moong dal is cooked, add coconut paste, turmeric, salt and boiled avarakkai.

11. Keep the flame low and mix well.

12. To Temper - Heat oil in a tadka pan, add mustard seeds and let them crackle.

13. Add urad dal and green chilli.

14. Fry for a few seconds.

15. Add to the avarakkai kootu and mix well.

16. Check for the salt and adjust accordingly.

17. Avarakkai Kootu Recipe is ready.
