What is 7 Cup Burfi (7 Cup Cake)?

7 Cup Burfi is a classic Indian sweet popularly made throughout South India. It is a traditional recipe typically made during Hindu Festivals such as Diwali (Deepavali) and Hindu Weddings.

It is a beginner-friendly traditional Indian sweet. Even an amateur cook can make this recipe. You don't need to make sugar syrup or check for any consistency. It is a simple recipe anyone can achieve perfect taste and texture at the first attempt itself.

Taste of 7 Cup Burfi

The texture, colour and method of preparation are similar to Mysore Pak and again the taste is similar to Mysore Pak and Palkova. However, 7 Cup Burfi has its own unique taste and aroma.

How the 7 Cup Cake/7 Cup Burfi recipe got its name?

This delectable and fudge-like Indian treat is known as 7 Cup Burfi or 7 Cup Cakes. Interestingly, this recipe got its name from the 7 cups of measuring required to make it.

The cup comes in small, medium, and large sizes. The only specification for this recipe is that all seven cups must be the same size. For instance, if you pick a small cup, you must measure the 7 cups of ingredients with the same size cup.

7 Cup Burfi Ingredients

To make a traditional 7 cup burfi/7 cup cake recipe, all you need is 7 cups of ingredients such as -

Besan/Kadalai Maavu/Gram Flour - 1 cup

Milk - 1 cup

Ghee - 1 cup

Freshly Grated Coconut or Desiccated Coconut - 1 cup

Sugar - 3 Cups

Simply put it,

7 Cup Burfi = 3 cups sugar + 1 cup gram flour + 1 cup milk + 1 cup ghee +1 cup grated coconut

The above is the traditional and standard measurement to prepare 7 cup burfi recipe. In this recipe, you can also add cardamom powder and nuts like chopped badam, and cashew nuts.

In this post, I've provided my variation of a 7-cup burfi dessert. Although I did not make any other changes to the original recipe, I did cut the sugar by 2 cups. Because 3 cups of sugar in the original 7-cup burfi recipe is too sweet to taste. Due to this, I've cut 1 cup of sugar in my recipe.

7 Cup Burfi = 2 cups sugar + 1 cup gram flour + 1 cup milk + 1 cup ghee +1 cup grated coconut (totally, 6 cups measurement)

The level of sweetness is entirely dependent on personal or family preferences. So you have the option of using the standard 7 cup measurement or my modified 6-cup measurement. It is entirely your choice.

TIP

The below-given recipe is a small quantity recipe in that measurement you get 10 equal pieces of burfi. You can increase the measurement by 2x, 3x or according to your need. The only tip here is to use the same measuring cup.

How to make a 7-Cup Burfi Recipe? | How to make a 7-cup cake recipe?

Timing - 30 minutes + 3 hours resting time or overnight

INGREDIENTS

Besan/Kadalai Maavu/Gram Flour - 1/4 cup
Milk - 1/4 cup
Ghee - 1/4 cup
Freshly Grated Coconut or Desiccated Coconut - 1/4 cup
Sugar - 1/2 Cups
Cardamom Powder - 1/2 teaspoon

INSTRUCTIONS

1. To begin making the 7 Cup Burfi | 7 Cup Cake recipe - Keep all the ingredients ready.

2. Grease a tray or set pan with ghee. Keep it aside.

3. In a heavy-bottom pan combine the ghee, milk, kadalai maavu (gram flour), sugar and grated coconut.

4. Gently mix all the ingredients together for 1-2 minutes without forming any lumps.

5. To Cook - Place the mixture on the stove and cook on a low flame.

6. Keep stirring for 1-2 minutes.

7. At this point, sugar completely dissolved and the mixture becomes liquid-like consistency.

8. Keep the flame low and constantly stir for further 5-6 minutes.

9. The mixture will begin to thicken. Add the cardamom powder.

10. Keep stirring and also scrape all the sides of the pan to avoid burning.

11. When the mixture releases ghee from the sides and you feel harder to mix.

12. Turn off the flame.

13. Keep stirring for a few seconds.

14. Transfer the mixture to the greased tray and gently flatten the top.

15. Rest for 20 minutes and then gently cut the burfi into square or diamond shapes.

16. Cool the burfi for at least 3-5 hours and preferably overnight.

17. Once the burfi is cool down completely, cut them in the markings using a sharp knife.

18. 7 Cup Burfi | 7 Cup Cake recipe is ready.

You can serve this 7 Cup Burfi | 7 Cup Cake recipe immediately or store them for a day in a room temperature and 2-3 days in the refrigerator.
