This potato fry recipe is a classic Tamil Nadu-style potato dish. It is a dry side dish typically prepared as an accompaniment for the south Indian lunch meal such as rasam-rice, sambar-rice, lemon rice, curd rice, tamarind rice and so on.

There are numerous recipes with potatoes (urulai kilangu). However, this potato fry is a classic and the quickest recipe that easily fits the school, college or office lunch box.

This potato recipe is incredibly popular and a favourite among kids. During my school days, my favourite lunch accompaniment was potato fry (urulai kizhangu varuval). I have fond memories of my mother asking my siblings and me what we wanted for lunch the night before school. We usually requested curd rice or lemon rice with a yummy side of potato fry. I bet a lot of you can relate to this!!

Classic Potato Fry Recipe Ingredients

Classic Potato Fry is a simple and quick side dish. It is prepared within 15- 20 minutes with minimal ingredients. This Classic Potato Fry Recipe require potato as the main ingredient and is flavoured with red chilli powder, turmeric powder, and salt and finally tempered with oil, mustard seeds, urad dal, dry red chilli and curry leaves.

Classic Potato Fry | Tamil Nadu Style Urulai Kilangu Varuval is a quick and easy South Indian side dish. You can easily prepare this within 15-20 minutes and serve it as an accompaniment to any Indian lunch meal.

INGREDIENTS

Potato/Urulai Kilangu - 3
Red Chilli Powder - 1 teaspoon
Turmeric Powder - 1/2 teaspoon
Salt - to taste
Water - as needed
Oil - 2 tablespoons
Mustard Seeds - 1/2 teaspoon
Urad Dal - 1 teaspoon
Dry Red Chilli (halved) - 1
Curry Leaves - 1 sprig

INSTRUCTIONS

1. To begin making the Classic Potato Fry | Tamil Nadu Style Urulai Kilangu Varuval - Keep all the ingredients ready.

2. To Prep - Rub and wash the potato in 3-4 exchanges of water.

3. Peel the skin and chop them into the desired shape.

4. To Boil - Heat 2-21/2 cups of water over a high flame, add the chopped potatoes with a pinch of turmeric and salt and parboil for 3-4 minutes or until half cooked.

5. Turn off the flame, drain the water completely and keep the potato aside.

6. To Fry - Heat oil in a heavy bottom kadai, add mustard seeds and allow them to splutter.

7. Add dry red chilli and curry leaves and fry for a few seconds.

8. Now add the par-boiled potatoes.

9. Give them a good mix.

10. Reduce the flame to the lowest heat and allow to cook completely. (Give them a mix in between cooking).

11. Once the potatoes are completely cooked, add the remaining turmeric powder, red chilli powder and salt.

12. Fry them all together for 1 minute.

13. When the raw smell from the spices disappears. Turn off the flame.
