INGREDIENTS
Cooked Rice - 2 cups
Salt - as needed
TO GRIND
Coriander Leaves - 1 bunch
Cumin Seeds/Jeeragam - 1/4 teaspoon
Ginger - 1/2 inch
Green Chilli - 2
Small Onions - 4
Water - 1/4 cup
FOR TEMPERING
Ghee - 1 tablespoon
Mustard Seeds - 1/2 teaspoon
Chana Dal - 1 teaspoon
Urad Dal - 1 teaspoon
Dry Red Chilli - 1
Curry Leaves - 1 sprig
Lemon Juice - 1 tablespoon
INSTRUCTIONS
1. To begin making the Kothamalli Sadam | Coriander Leaves Rice - Keep all the ingredients ready.
2. To Grind - In a mixer grinder, add coriander leaves, cumin seeds, ginger, green chilli and small onion.
3. Using 1/4 cup of water grind them to a coarse paste. Set aside.
4. To Temper - Heat ghee in a pan, add mustard seeds and allow them to splutter.
5. Add chana dal, urad dal and dry red chilli and fry for a few seconds.
6. Now add the grounded paste and fry for 1-2 minutes.
7. If you didn't add salt while cooking rice. Add now on the green masala. Mix well.
8. Turn off the flame.
9. Add lemon juice, curry leaves and cooked rice, and mix well.
10. Check for the salt and adjust now.
11. Kothamalli Sadam | Coriander Leaves Rice is ready.
