How to make Murungai Keerai Soup? | How to make Drumstick Leaves Soup?

Murungai Keerai Soup | Drumstick Leaves Soup is an easy, nutritious, and appetizing South Indian soup recipe. You can make this Murungai Keerai soup in 30 minutes and serve it as a healthy soup on cold days or simply with lunch.

INGREDIENTS

Murungai Keerai/Drumstick Leaves - 1 fist (tightly measured)
Toor Dal/Pigeon Pea Dal - 2 tablespoons
Big Onion - 1
Tomato - 1
Green Chilli - 2
Water - 4 cups + 2 1/4 cups
Salt - to taste
Cooking Soda - 1 pinch

WHOLE SPICES

Cloves - 2
Kalpasi - 1
Bay Leaves - 1
Fennel Seeds - 1 teaspoon
Peppercorns - 1 teaspoon
Cumin Seeds - 1 teaspoon

INSTRUCTIONS

1. To begin making the Murungai Keerai Soup | Drumstick Leaves Soup recipe - Keep all the ingredients ready.

2. To Prep - Take a deep bowl and fill it with water.

3. Add a pinch of salt and turmeric powder. Mix well.

4. Now add the drumstick leaves and soak them for 5 minutes.

5. Meanwhile, slice the onion, chop the tomato, crush the green chilli and ground the peppercorns and cumin seeds using a mortar and pestle. Set aside.

6. Now take out the drumstick leaves from the water and wash them with 2-3 exchanges of water. Drain the water completely.

7. To Boil - Heat 4 cups of water in a pan and add washed toor dal and cook for 8-10 minutes or until well cooked. Once boiled, set aside.

8. To Blanch - Heat 2 cups of water in a pan and add a pinch of cooking soda and allow to boil for a few seconds.

9. Now drop the drumstick leaves and blanch for a few seconds.

10. Remove them immediately and wash them in tap water.

11. To Grind - In a mixer grinder, add the blanched drumstick leaves with 1/4 cup of water and grind to a paste. Set aside.

12. To make a soup - Heat oil in a kadai, add fennel seeds, cloves, bay leaves and kalpasi and fry for a few seconds.

13. Add sliced onion and saute for a few seconds.

14. Now add chopped green chilli, tomato and salt and saute for a few seconds.

15. Add the cooked toor dal with water and allow to boil for 3-5 minutes over a low flame.

16. Now add the drumstick leaves paste and mix well.

17. Again allow them to cook on a low flame for 2 minutes.

18. Check for the salt and adjust accordingly.

19. Turn off the flame.

20. Strain the liquid using a colander. Use a ladle to press all the ingredients.

21. Bring back to a pan and finally add the pepper and cumin powder and mix well.
