Muttai Vadiyal is also referred to as Muttai Valiyal, Muttai Kalakki, or simply Egg Kalakki. It is a most popular street food delicacy originating from the Indian state of Tamil Nadu.
Egg Kalakki is incredibly simple yet delicious, comprising eggs and spices cooked in a specific way and served alongside Parotta (Barotta) and Salna (Chicken or Mutton Kurma) or with Biryani. It is a popular choice among locals and tourists alike, with many food enthusiasts making a point to sample this mouth-watering dish during their travels.
What is Kalakki?
"Kalakki" is a Tamil word used to refer to "mixing" ingredients altogether. In the kalakki recipe, an egg is mixed with chilli powder, salt, pepper powder, and salna. After that, it was vigorously beaten for a few seconds to create tiny air bubbles. Finally, half cooked on the dosa tawa with some oil. Here, the bottom portion has been cooked while the upper portion has not. This dish is similar to a half-boiled egg omelette but with a different taste and texture.

INGREDIENTS
Egg/Muttai/Anda - 1
Chilli Powder - 1 pinch
Pepper Powder - 1 pinch + 1 pinch (for garnish)
Salt - a pinch
Salna (Chicken or Mutton Salna) - 2 tablespoons
Oil - 1 teaspoon
Coriander Leaves - for garnish
INSTRUCTIONS
1. To begin making the Madurai Style Egg Kalakki Recipe - Keep all the ingredients ready.
2. To mix - In a deep bowl, add in the egg, chilli powder, pepper powder, salt, and salna.
3. Using a fork spoon, vigorously beat all the ingredients together for a few seconds to form tiny air bubbles. Set aside.
4. To cook - Heat a dosa tawa on a high flame, add a spoon of oil.
5. Pour the egg mixture onto the tawa.
6. Allow to cook the bottom part of the egg kalakki for a few seconds.
7. Immediately fold all the sides of the kalakki and bring it to the centre.
8. Here, the bottom portion has been cooked while the upper portion has not (uncooked).
9. Transfer to a serving plate and garnish with pepper powder and coriander leaves.
10. Muttai Vadiyal | Egg Kalakki recipe is ready.
Serve immediately as an accompaniment to any vegetarian or non-vegetarian meal. As I already mentioned, it tastes best with parotta salna.

Tips to make a perfect Egg Kalakki
1. Egg kalakki tastes best when hot so never prepare it in advance.
2. You can use mutton kurma, chicken kurma or egg kurma to prepare this dish.
3. While making egg kalakki, dosa tawa should be hot and you have to be quick in folding and removing it from the tawa.
4. For an amateur cook or on the safer side, please use a non-stick pan to make egg kalakki. However, it tastes the best when cooked on the iron tawa.
