Chow Chow Thayir Pachadi | Chayote Squash Curd Pachadi is a simple, flavorful, and delicious dish that can be easily prepared within 20 minutes. It can be served as an accompaniment to rice, chapati, or a healthy snack.

INGREDIENTS

Chow Chow/Chayote/Seema Vangaya (medium-sized) - 1
Curd - 1 cup
Coconut (grated) - 2 tablespoons (or) 4 to 5 (pieces)
Roasted Gram Dal/Pottukadalai - 1 teaspoon
Ginger - 1/2 inch
Salt - to taste
Water - as needed
Coriander Leaves (chopped) - 1 tablespoon

TEMPERING

Oil - 1 tablespoon
Mustard Seeds - 1/4 teaspoon
Cumin Seeds/Jeera - 1/4 teaspoon
Dry Red Chilli (halved) - 1
Asafoetida - 1 pinch
Curry Leaves - 5

INSTRUCTIONS

1. To start preparing the Chow Chow Thayir Pachadi | Chayote Squash Curd Pachadi, gather all the required ingredients.

2. To Prep - Wash, peel and chop the chow chow into fine bite-sized cubes. Set aside.

3. To Cook - Heat a pan, add the chopped chow chow, salt and 1/2 cup of water.

4. Keep stirring in between cooking.

5. Allow to cook until soft.

6. Turn off the flame and allow to cool.

7. To Grind - In a mixer grinder, add coconut, ginger and roasted gram dal.

8. Grind them to a paste by adding 1/4 cup of water.

9. Take a bowl and add boiled chow chow, curd and coconut paste. Mix well.

10. To Temper - Heat oil in a tadka pan, add mustard seeds and allow to splutter.

11. Add cumin seeds, dry red chilli, asafoetida and curry leaves.

12. Fry for a few seconds.

13. Add the tempering to the chow chow thayir pachadi.

14. Add coriander leaves and mix well.

15. Check for the salt and adjust accordingly.
