Tamarind - 1 big lemon-sized
Curd - 1/4 cup
Turmeric Powder - 1/4 teaspoon
Boiled Chickpeas - 1/2 cup (optional)
Water - as needed
Salt - to taste

Vegetables

Drumsticks - 1
Brinjal - 2
Carrot - 1
Chow Chow - 1/4
Flat Beans - 3
Potato - 1

For Paste

Fenugreek Seeds - 1/4 teaspoon
Coconut Grated - 1/2 cup
Raw Rice Grains - 1 tablespoon
Urad Dal - 1 tablespoon
Dry Red Chillies - 6

For Tempering

Coconut Oil - 3 tablespoons
Mustard Seeds - 1/2 teaspoon
Curry Leaves - 2 sprigs

INSTRUCTIONS

Here is the recipe to prepare Iru Puli Kuzhambu, also known as Yervuli Kuzhambu Recipe.

1. Clean, wash and chop the vegetables into big chunks.

2. Soak the tamarind in 1/2 cup of water for 15 minutes and set aside.

3. Heat a tablespoon of oil in a pan over medium flame. Add fenugreek seeds and dry red chillies. Fry for a few seconds and then remove from the pan.

4. In the same oil, add urad dal and rice grains. Fry for a few minutes or until golden brown.

5. Turn off the flame. Add the grated coconut and stir well for a minute.

6. Transfer the mixture to a mixer grinder. Allow it to cool for some time and then grind it to a fine paste with some water.

7. Heat a heavy bottom kadai. Add a spoonful of oil and the chopped vegetables. Fry for a few seconds.

8. Add enough water and salt to cook the vegetables. Cook until the vegetables are halfway done.

9. Dilute the tamarind extract with water and add it to the vegetables.

10. Add 2 cups of water, turmeric powder and boiled chickpeas. Mix well and cook for 8-10 minutes or until the raw smell of tamarind disappears.

11. Add the coconut paste mixture and cook for 3-5 minutes.

12. If you need more water, add some warm water and cook further.

13. Dilute the curd with 1/2 cup of water and whisk well to make buttermilk.

14. Keep the flame low and add the buttermilk. Cook for a minute.

15. Turn off the flame.

16. Heat a spoonful of oil in a tadka pan. Add mustard seeds and allow them to splutter. Add curry leaves and fry for a few seconds. Turn off the flame.
