Bombay Chutney Ingredients
Kadalai Maavu/Besan Flour/Gram Flour - 2 tablespoons
Onion - 1
Tomato - 1
Green Chilli - 2
Ginger - 1/4 teaspoon
Water - 4 cups
Turmeric - 1 teaspoon
Salt - to taste
For Tempering
Oil - 2 tablespoons
Mustard Seeds - 1/4 teaspoon
Cumin Seeds - 1/4 teaspoon
Chana Dal - 1 teaspoon
Curry Leaves - 1 sprig
Dry Red Chilli - 1
For Garnish And Finishing
Asafoetida - 1/2 teaspoon
Coriander Leaves (chopped) - 2 tablespoon
Ghee - 1 teaspoon
Lemon Juice - 1 tablespoon
Kurma Masala - 1/4 teaspoon (optional)
INSTRUCTIONS
Here are the step-by-step instructions to prepare a delicious Bombay Chutney Recipe, also known as Kadalai Maavu Chutney Recipe, that you can serve as a scrumptious accompaniment to idli, dosa, poori, chapati or any breakfast item.
1. Begin by washing, peeling and slicing the onions. Also, roughly chop the tomato, and finely chop the green chillies and ginger. Keep them aside.
2. Take a deep bowl and add gram flour (besan/kadalai maavu) to it. Add 1/2 cup of water and whisk the gram flour and water together to make a thick slurry.
3. Slowly add the remaining water and whisk well to bring it into a thin gram flour slurry.
4. Add salt to the slurry and whisk well. Set aside.
5. Heat oil in a heavy bottom kadai and add mustard seeds. Allow them to splutter.
6. Add cumin, chana dal, dry red chilli and curry leaves. Fry for a few seconds.
7. Now, add the sliced onions and fry until they turn soft.
8. Add the tomato and cook until it is soft.
9. Add the ginger and green chillies and fry for a minute.
10. Add the turmeric powder and fry for a minute.
11. Keep the flame low and add the gram flour slurry.
12. Stir and cook for 4-5 minutes on a low flame.
13. When the raw smell disappears and the quantity thickens, add the asafoetida and mix well.
14. Turn off the flame and check for salt. Adjust accordingly.
15. Add the coriander leaves, lemon juice, ghee and kurma masala (optional).
16. Mix well and serve hot.
